古玛咖喱蔬菜Kurma Vegetables Curry

【材料】
食油3-4汤匙、白油2汤匙、大葱2粒(切片)、班兰叶2片(打结)、红辣椒2条(切片)

【香料】
A: 八角1粒、桂皮3公分、袖籽8粒、丁香4粒
B: 古玛咖哩粉25克、肉类咖哩粉1/2汤匙(加水混合成为咖喱糊)

【研磨材料】
A: 姜2.5公分、蒜头2瓣、小葱头2粒、清水60毫升
B: 青辣椒2条(切片)、杏仁粉1汤匙、番茄1粒、清水250毫升

【杂菜材料】
芥兰花100克(切花粒)、包菜花100克(切花粒)、红萝卜1条(滚刀切)、马铃薯1 粒(滚刀切)、四季豆50克、清水250毫升、椰浆头100毫升、优格2汤匙(随意)

【做法】
1.起锅热油和白油,把香料A 炒数秒钟后加入大葱。炒至转黄。(图1)
2.加入研磨材料A和香料B拌炒至香。(图2-3)
3.加入研磨材料B,慢火焖5-10分钟。(图4-5)
4.最后加入班兰叶、红辣椒,再倒入杂菜 和清水煮沸。(图6-7)
5.加入椰浆、优格及盐调味,即可熄火。(图8)

【Ingredients】
3-4 Tbsps cooking oil, 2 Tbsps ghee, 2 big onions (chopped coarsely), 2 knotted pandan leaves, 2 stalks red chilly(sliced lengthwise)

【Spices Ingredients】
A: 1 star anise, 3cm cinnamon stick, 8 cardamon pods, 4 cloves
B: 25g kurma curry powder, 1/2 Tbsp meat curry powder(add water, mix as curry paste)

【Grounded Ingredients】
A: 2.5cm ginger, 2 cloves garlic, 2 shallots, 1/4 cup water
B: 2 stalks green chilly (sliced lengthwise), 1 Tbsp ground a monds, 1 medium tomato, 250ml water

【Mixed vegetables Ingredients】
100g broccoli (cut into florets), 100g cauliflower (cut into florets), 1 carrot(cut into wedges), 1 potato(cut into wedges), 50g French beans, 250ml water, 100ml thick coconut milk, 2 Tbsps yoghurt [optiona ]

【Method】
1.Heat oil & ghee in a wok / pan, saute spices A for a few seconds, then sauté onions until light browned. (pic 1)
2.Add ground ingredients A and spices ingredients B, saute till fragrant, stirring continuously.(pic2-3)
3.Add ground ingredients B, simmer for another 5-10 minutes.(pic4-5)
4.Lastly add pandan leaves, red chilli and a mixed vegetables, pour in water, bring to a boil.(pic 6-8)
5.Season to taste with salt, add coconut milk and yoghurt before turn off heat.
