可可流沙芝麻枣Chocolate Sesame Balls

【材料A】
汀面粉35克、滚水30克

【材料B】
糯米粉300克、水180克、幼糖80克、白油100克

【材料C】
白芝麻100克、黑芝麻1汤匙

【可可馅料】
牛油200克、糖粉200克、可可粉100克、忌廉(Cream)30克

【做法】
1.把A混合,加入B充份搓匀揉成幼滑面团。(图1)
2.将面团分成每粒约40克重,每份包入1茶匙可可馅搓圆成圆球。(图2-4)
3.将糯米球浸入水中立刻捞起,沾上C料芝麻,投入热油炸至金黄色及浮起便捞出,沥油。(图5-6)

【可可馅做法】
把馅料放入不锈钢盘混合,隔水炖煮,边煮边搅至物料完全渗透成匀滑可可糊,待凉移入冰箱冷冻至凝固。

【Ingredients A】
35g wheat starch, 30g boiling water

【Ingredients B】
300g glutinous rice flour, 180g water, 80g castor sugar, 100g shortening

【Ingredients C】
100g sesame seeds, 1 tbsp black sesame seeds

【Chocolate filling】
200g batter, 200g icing sugar, 100g coco powder, 30g cream

【Method】
1.Mixes A ingredients and then mix with B and knead into smooth dough.
2.Separate dough into 40g each and wrap it with filling into ball shape.
3.Dip glutinous ball into water briefly and coat it with mixed sesame seed, and then deep fry until golden brown, drain.

【Method for Chocolate filling】
Mixes ingredients in mixing bowl, and then double boil and keep stirring until smooth, let cool and then frozen for later use.
