台式三杯鸡Taiwanese Three Cups Chicken

【材料】
鸡胸肉280克、姜8片、蒜5粒、辣椒干5条、麻油1杯、糖浆10克、米酒1杯、酱油1杯、黑酱油5克、九层塔15克、青葱1棵(切粒)、红辣椒1条切薄片

【做法】
1. 平底锅热油,放入鸡胸肉煎至两面呈金黄色,捞起滴干油,斩件备用。(图1)
2. 把锅烧热,倒入麻油,接着放进姜片快速煸炒至香,再下蒜粒和辣椒干继续翻炒,直到蒜粒软身。(图2)
3. 加入鸡肉快速翻炒直到鸡肉约有八九成熟,这时就加入黑酱油,继续翻炒待烧开。(图3-4)
4. 准备一个砂锅,将已经烧开的三杯鸡移入砂锅里,加入半杯米酒、酱油和糖浆,上盖大火煮15分钟至滚或汁浓稠。(图5)
5. 起锅前撒入九层塔、红椒和青葱,再倒入半杯米酒炒均匀即成。(图6-8)

【INGREDIENTS】
280 chicken breast meat, 8 slices ginger, 5 garlic, 5 dried chilli, 1 cup sesame oil, 10g syrup, 1 cup Chinese rice wine, 1 cup soy sauce, 5g dark soy sauce, 15g basil leaves, 1 stalk spring onion (chopped), 1 red chilli (slice)

【METHOD】
1.Heat some oil in wok, sear chicken breast meat till both side golden brown, drain and chopped in bite size. (pic 1)
2.Heat sesame oil in wok, saute ginger slices till fragrant, add in garlic and dried chilli, stir well until garlic softhen. (pic 2)
3.Add in chicken, stirring occasionally until half cook, toss in dark soy sauce, continue fry well. (pic 3-4)
4.Transfer chicken to claypot, add in half cup rice wine, soy sauce and syrup, cover the lid and bring to a boil until sauce is lightly reduced, about 15 minutes.(pic 5)
5.Before remove from the heat, stir in the basil, red chilli and chopped spring onion, mix well with chicken. Toss in another half cup of rice wine, serve immediately. (pic 6-8)
