咖啡脆饼Coffee Biscotti

【材料】
鸡蛋100克、细糖160克、盐3克、咖啡精15克、中筋面粉225克、发粉2克、整粒杏仁60克、开心果50克

【做法】
1. 鸡蛋和糖一起搅拌至糖溶解。(图1)
2. 加入盐、咖啡精、面粉及发粉,搅拌均匀。(图2-4)
3. 加入开心果和杏仁,搅拌均匀。(图5-6)
4. 把面团收在冰箱6个小时。(图7)
5. 从冰箱取出面团,分成2份,搓成长条。
6. 放入预热烤炉以180℃烤20-25分钟。(图8)
7. 让饼条冷却后切成4毫米厚片。(图9)
8. 再放入烤炉,以140℃烤15分钟即可。(图10)

【Ingredients】
100g whole egg, 160gm caster sugar, 3gm salt, 15gm coffee essence, 225gm all-purpose flour(sieved), 2gm baking soda, 60gm whole almond, 50gm pistachio

【Method】
1. Whisk egg and sugar until sugar completely dissolve. (pic 1)
2. Add in salt, coffee essence, all-purpose flour and baking powder to continue mixing. (pic 2-4)
3. Add in pistachio and whole almond, mix well. (pic 5-6)
4. Rest the dough for 6 hours in refrigerator. (pic 7)
5. Separate the dough into two portions, shape into log.
6. Bake at 180℃ for 20-25mins.(pic 8)
7. Cool down the biscotti and cut into 4mm slices. (pic 9)
8. Bake for second time in the oven at 140℃ for 15mins. (pic 10)
