咖喱塘虱Curry River catfis

【材料】
塘虱500g、大葱1个(切块)、蒜茸1茶匙、姜片、咖喱叶1汤匙、鱼类咖喱粉1汤匙、红辣椒1条(剖开切段)

【调味料】
生抽1茶匙、盐1茶匙、糖1茶匙

【做法】
1.把塘虱洗净切块汆烫备用。(图1-2)
2.锅子热上油,将塘虱以小火煎香;捞起沥干油备用。(图3-4)
3.锅子留些热油,把大葱,蒜茸和姜爆香,倒进咖喱叶及咖喱粉以小火炒香。(图5-6)
4.然后把塘虱回锅快炒兜均匀,加入盖过材料的清水焖煮至收汁。(图7)
5.最后下调味料和红辣椒炒匀即可盛盘享用。

【Ingredients】
500g River catfish, 1 onion(cut wedges), 1 tsp chopped garlic, 5 slices ginger, 1 tbsp curry leaves, 1 tbsp fish curry powder, 1 red chili(wedges)

【Seasoning】
1 tsp soy sauce, 1 tsp salt, 1 tsp sugar

【Method】
1.Wash river catfish, cut into pieces and blanch in boil-ing water.(pic 1-2)
2.Heat oil in wok, sear river catfish in low heat until fragrant, drain.(pic 3-4)
3.Keep some oil in wok, sauté onion, garlic and ginger until fragrant, add in curry leaves and curry powder, stir well.(pic 5-6)
4.Return river catfish to wok, stir-fry briskly, pour in ad-equate water and simmer until gravy thickens.(pic 7)
5.Toss in seasoning and red chilli, dish out.
