咸味煎饼Savoury pancake

【材料】
普通面粉180克(分2次用)、粟米粉100克、蛋黄粉20克、热水130克、盐1/4小匙、清水50克

【馅料】全部切丝
沙葛100克、香菇3朵、芋头150克、红萝卜30克

【调味料】
盐1/2小匙、生抽1汤匙、胡椒粉少许、麻油少许

【做法】
1.将1/2份面粉筛入盆中,拌入其余的粟米粉及蛋黄粉,冲入热水搅拌均匀。再加入1/2份面粉搓匀,休面15分钟。(图1-2)
2.烧热油,加入馅料和调味料一起炒至香和软即可上碟待凉用。(图3)
3.将揉好的面团分每粒40克,把面团压扁再用杆棍擀成薄皮,包入馅料,收口,再压扁成饼形。(图4-6)
4.烧热平底锅,刷上少许油,将饼煎成两面金黄色即可享用。(图7)

【Ingredients】
180g plain flour(divide in 2 portion), 100g corn flour, 20g custard powder, hot water 130g,1/4 tsp salt, 50g water

【Filling】all jullienne
100g yam bean, 3 mushroom, 150g yam, 30g carrot

【Seasoning】
1/2 tsp salt, 1 tbsp soy sauce, pepper to taste, some sesame oil

【Method】
1.Mix 1/2 portion of plain flour with corn flour and custard
powder in a mixing bowl, pour in hot water and stir well. Add in another half portion of plain flour, mix well become dough, cover it and rest for 15 minutes.(pic 1-2)
2.Heat oil in wok, saute all filling ingredients till fragrant,
season to taste, set aside.(pic 3)
3.Scale the dough into 40g per portion, flatten slightly and wrap in filling ingredients, flatten again.(pic 4-6)
4.Brush non stick pan with oil, fry the pancake till both side golden brown, serve hot. (pic 7)
