咸蛋黄炒螃蟹Salted Egg Crab

【材料】
A:肉蟹2只、咸蛋黄5粒(蒸熟)、菜油2汤匙、咖哩叶2支
B:蒜茸½汤匙、小葱茸½汤匙、姜茸¼汤匙

【调味料】
盐½茶匙、鸡精粉1茶匙、糖½茶匙、咖哩粉1汤匙

【做法】
1.螃蟹去内脏和肺叶洗净斩件,蚧钳略拍压,然后放入热油中过油,捞出备用。(图1-2)
2.将熟咸蛋黄压碎备用。(图3)
3.溶解菜油,爆香材料B,放入咸蛋黄炒香至起泡沫,加入咖哩叶及调味料炒香。(图4-6)
4.拌入油爆过的蚧,翻炒均匀,即可上桌。(图7)

【INGREDIENT】
A:2crabs, 5salted egg yolk (steam to cook), 2 tbsp margarine, 2 stalk curry leaf
B: ½ tbsp chopped garlic, ½ tbsp chopped shallot, ¼ tsp chopped ginger

【SEASONING】
½ tsp salt, 1 tsp chicken powder, ½ tsp sugar, 1 tbsp curry powder

【METHOD】
1.Clean and cut crabs into pieces; smash the craws and then blanch in hot oil, drain.(pic1-2)
2.Mashed and chopped the cooked salted egg yolk, set aside.(pic 3)
3.Melt margarine in wok and sauté ingredients B until fragrant; add in salted egg yolk and cook until bubbly; add in curry leaf and seasoning, cook until aromatic. (pic 4-6)
4.Toss in fried crabs and stir until cook through, done.(pic 7)
