咸香茄饼 Eggplant Burger

【材料】
茄子2条
【馅材料】
猪肉碎350克、咸鱼肉20克(剁碎)、盐和白糖各1⁄2茶匙、酱油1汤匙、胡椒粉少许、料酒1茶匙、生粉1汤匙,莞荽茸
1汤匙、蒜茸1汤匙、青葱茸2汤匙、蛋白1个
【酱汁材料】
辣豆瓣酱2汤匙、豆酱1汤匙、番茄酱2汤匙、白糖1汤匙、酱油1汤匙、清水50毫升、生粉1汤匙
【酱汁配料】
芫荽茸1汤匙、蒜茸1汤匙、青葱茸2汤匙、红辣椒粒1汤匙
【面糊材料】
自发面粉200克、加冰水适量(搅拌成糊)
【做法】
1. 把所有馅料材料混合均匀备用。(图1-2)
2. 茄子洗净切1公分厚块,中间再划开以填馅料。(图3-4)
3. 把酿好的茄饼沾面糊,用中火炸至金黄色,滴干。(图5-6)
4. 把所有酱汁材料混合均匀。
5. 起锅热少许油,把酱汁配料炒香,倒入混合好的酱汁材料,煮至稀稠即可,试味。
6. 把茄饼和酱汁分开上桌,吃时才淋上。

wine, 1 tbsp corn flour, 1 tbsp chopped coriander, 1tbsp chopped garlic, 2 tbsp chopped spring onion, 1 egg

【Sauce ingredients】
2 tbsp spicy soy bean paste, 1 tbsp soy bean paste, 2tbsp tomato sauce, 1 tbsp sugar, 1 tbsp soy sauce, 50ml
water, 1 tbsp corn flour
【Sub-ingredients for sauce】
1 tbsp chopped coriander 1 tbsp chopped garlic, 2 tbsp chopped spring onion,1 tbsp chopped red chili
【Batter】
200g self-raising flour , adequate ice water (mixes into batter)
【Method】
1. Mixes all filling ingredients and then stuff it into eggplant.( pic 1-2)
2. Cut eggplant into 1 cm thick slices, slit in between to stuff in filling.(pic 3-4)
3. Coat stuffded eggplant in batter, deep fry in medium hot oil until golden brown, drain.(pic 5-6)
4. Mixes all sauce ingredients.
5. Heat some oil in wok, sauté sub-ingredients for sauce until fragrant, toss in sauce ingredients and cook until
starchy, adjust taste.
6. Serve fried eggplant burger with sauce, do not pour sauce over if not consume immediately.
