咸鱼炒饭Fried Rice with Salted Fish

【材料】
白冷饭2碗、丹佬咸鱼肉40克(切丁)、鸡肉100克(切丁)、鸡蛋2粒(打散)

【调味料】
盐、鸡精粉及胡椒粉适量

【做法】
1.烧热适量油煎香咸鱼肉,捞出沥油待用。(图1)
2.以适量温油把鸡肉丁过油,取出沥油。(图2-3)
3.留油少许倒入蛋液拌炒,加入冷饭及调味料炒匀。(图4-5)
4.最后回锅加入咸鱼及鸡肉,以大火翻炒均匀即可。(图6)

【INGREDIENTS】
2 bowls cold white rice, 40g Danlau salted fish(diced), 100g chicken meat(diced), 2 eggs(beaten)

【SEASONING】
Dash of salt, pepper & chicken stock granule

【METHOD】
1.Saut’e salted fish with some oil until fragrant, dish out. (pic 1)
2.Blanch chicken meat with warm oil, drain. (pic 2-3)
3.Keep some oil wok and pour in egg sauce, stir-fry until cooked, and then toss in rice and seasoning. (pic 4-5)
4.Then add in salted fish and meat, stir-fry with high heat until well mix. (pic 6)
