咸鱼肉碎炒茄子Stir-fried Eggplant with Salted Fish

【材料】
茄子500克、咸鱼25克、肉碎150克 、蒜茸1汤匙、姜茸1汤匙、小辣椒2条(切粒)、青葱1 根(切粒)食油1汤匙

【调味料】
生抽2茶匙、蚝油1茶匙、老抽½茶匙、清水 2 汤匙

【做法】
1. 把茄子切成5公分长条状,以适量油炸至微黄,捞起沥干油。
2. 鑊里烧热1汤匙油,把咸鱼煎香,取出去骨,压碎咸鱼肉。
3. 用鑊里余下的油爆香蒜茸、姜茸和小辣椒粒,加入肉碎炒至熟。
4. 加入调味料、咸鱼、茄子及青葱粒,拌炒均匀即可盛起。

【Ingredients】
500g eggplant, 25g salted fish, 150g minced meat, 1 tbsp chopped garlic, 1 tbsp chopped ginger, 2 chili padi (chopped), 1 stalk spring onion (chopped) , 1 tbsp cooking oil

【Seasoning】
2 tsp soy sauce, 1 tsp oyster sauce, ½ tsp dark soy sauce, 2 tbsp water

【Method】
1. Cut eggplant into 5 cm strips and then deep fry with hot oil until brown, drain.
2. Heat 1 tbsp oil in wok, sauté salted fish until fragrant. Dish out, remove the bones and mash the flesh.
3. Use the remaining oil in wok to sauté garlic, ginger and chili padi until fragrant, toss in minced meat and keep stir-frying until cooked.
4. Add in seasoning, salted fish, eggplant and chopped spring onion, stir to mix and dish out.
