南瓜酱烤海鲜 Seared Seafoods with Pumpkin Puree

材料
大虎虾4只(去肠泥)、吐拿鱼肉60克、橄榄油100毫升、盐和胡椒粉适量
4 nos big tiger prawn(deveined), 60g Tuna loin, 100ml olive oil, dash of salt and pepper

南瓜酱
南瓜300克(切丁)、大葱半粒(剁碎)、牛油50克、鲜牛至草2束、盐和胡椒粉适量、鸡汤500毫升、鲜奶油50毫升、豆蔻粉1小撮
300g pumpkin(small cubes), 1⁄2 onion(chopped), 50g butter, 2 sprig fresh oregano, dash of salt and pepper, 500ml chicken stock, 50ml cooking cream, 1 pinch Nutmeg powder

蚬壳意大利通粉
蚬壳意大利通粉50克、额外橄榄油50毫升、小葱头30克(剁碎)、蒜头4瓣(剁碎)洋莞荽5克、盐和黑胡椒粉调味
50g dry shell pasta, 50ml extra virgin olive oil, 30g shallot (chopped), 4 cloves garlic(chopped), 5g English Parsley, salt and black pepper crushed to taste

南瓜酱做法
1.将南瓜切小块,放入沸水中煮熟备用。(图1)
1.Small cute pumpkin, cook in boilling water till cooked. (pic 1)

2.锅内煮溶牛油,放入南瓜,鲜牛至草及大葱炒香。加入鸡汤,煮滚后转小火焖至软。
2.Saute pumpkin, fresh oregano and onion in hot pan with butter.Add in chicken stock, bring to boil and simmer till soften.

3.用电动搅拌器把材料搅拌成泥状,加入鲜奶油、豆蔻粉、盐及胡椒粉调味。(图2)
3.Puree in a food processor , season to taste with cooking cream nutmeg powder, salt and pepper.(pic 2)

蚬壳意大利通粉
1.把蚬壳意大利通粉以滚水烫至刚好软化即可,然后滴干。(图3)
1.Boil shell pasta in salted boiling water till al dente, drained and keep aside. (pic 3)

2.另外起锅以橄榄油把葱头和蒜头炒香。
2. In a clean pan, saut? shallot and garlic with olive oil till aromatic.

3.加入蚬壳意大利通粉,拌入调味料及洋莞荽即可。(图4)
3.Add in cooked pasta, season to taste, tossed in English parsley, served hot.(pic 4)

吃法
1.把吐拿鱼随意切块。
1.Slice tuna into desire shape and size.

2.用盐和胡椒粉腌虾和鱼肉。
2.Season tuna and prawns with salt and pepper.

3.把鱼肉放入平底锅里每面煎20秒钟,而虾则煎1分钟,趁热吃。(图5-6)
3.Pan sear tuna for 20 second on each side and prawn for 1 minute on each side. Served hot.(pic 5-6)
