海南猪肉汉堡包 Hainanese Pork Chop Burger

海南肉饼材料:可做6-8个
猪肉碎600克、大葱1粒(剁碎)、混合香草1茶匙、狄绒芥末酱1茶匙、梳打饼35克、A蛋1粒(打散)、parmesan芝士茸30克、盐和胡椒粉适量
600g minced pork, 1 big onion (finely chopped), 1 tsp mixed herbs, 1 tsp Dijon mustard, 1 Tbsps sugar,35 g cream crackers, 1 “Grade A” egg (beaten), 30g grated parmesan cheese, salt & pepper to taste

海南酱材料
A:牛油3汤匙、大葱1粒(切丝)、番茄2粒(切瓣)、冷冻青豆100克
A: 3 Tbsps butter, 1 big onion (sliced), 2 small tomatoes (quartered), 100g frozen peas

B:蚝油1汤匙、HP酱2汤匙、胡椒粉少许、酱油2汤匙、番茄酱3汤匙、辣椒酱1汤匙、盐1茶匙、白糖2茶匙、清水1杯、生粉2茶匙+清水2汤匙(勾芡)
B: 1 Tbsp oyster sauce, 2 Tbsps HP sauce, dash of ground white pepper, 2 tsps light soya sauce, 3 Tbsps tomato ketchup, 1 Tbsp chili sauce, 1 teaspoon salt, 2 tsps sugar , 1 cup water, 2 tsps cornflour + 2 Tbsps water for thickening

配料
汉堡包6-8个(横切开涂牛油)、海南酱、生菜、番茄片、青瓜片
6-8 burger buns (split & buttered), salad leaf, tomatoes, cucumber

海南酱做法
起锅热牛油,把大葱炒至软身,然后加入所有酱汁材料B;煮滚后加入番茄焖至软身汁稠,最后加入青豆和勾芡,熄火盛出待用。(图1-4)
Heat butter, saute the onions until soft, then add all the sauce ingredients B. Bring to a boil; add simmer until tomatoes are limp and sauce thickens. Lastly add peas adding the thickening solution. Turn off heat and set sauce aside. (pic 1-4)

海南肉饼做法
把所有肉饼材料混合均匀,然后分成135-150克一份,面积和汉堡包一样大小,然后放入冰箱30分钟。
起锅热少许油,把肉饼以小火煎至两边熟透。(图5)
Combine all patties ingredients and mix with damp hands. Form into round patties about 135-150 g each, same size as the burger bun. Chill for 30 minutes.Preheat non-stick pan, add some oil & pan fry the burger patties over low heat until thoroughly cooked, turning over once.(pic 5)

组合
把生菜,青瓜,番茄及肉饼顺序放在面包上,淋上海南酱,盖上面包即可享用。(图6-8)
Lay the salad leaf, cucumber, tomatoes and burger patty on top of bun, top with Hainanese sauce and cover with another half of bun and serve immediately. (pic 6-8)
