妈蜜猪柳 Stir-fried Pork with Marmite Sauce

【材料】
猪柳300克
【腌料】
鸡蛋半粒、鸡精2克、盐2克、发粉1克、生粉20克、水仙面粉10克、胡椒粉少许、清水80毫升、食油15克
【配料】
大葱80克、大青椒50克、大红椒50克、大黄椒50克、青生菜80克、食油80克
【酱料】
清水50毫升、妈蜜汁2克、美极豉油25克、白糖10克、酸梅酱25克、麻油10克、 苹果酱80克、蜜糖15克、蚝油10克
【做法】
1. 用腌料腌猪柳肉至少1小时。(图1)
2. 起锅热80克油,把大葱、各色灯笼椒爆一爆。(图2)
3. 留少许油在锅,把猪肉煎至两边转赤。(图3-4)
4. 把酱料混合,然后下锅煮至滚。(图5)
5. 将猪肉回锅,兜一兜后加入其他材料,快速炒一遍即可盛出,以生菜拌碟。(图6)

【Ingredients】
300g  pork loin
【Condiments】
½ egg, 2g chicken powder, 2g salt, 1g baking powder, 20g corn flour, 10g flour, dash of pepper, 80ml water, 15g oil
【Sub-ingredients】
80g onion, 50g each of green, red & yellow capsicum, 80g lettuce, 80g oil
【Sauce】
50ml water, 2g marmite, 25g Maggi soy sauce, 10g sugar, 25g plum sauce, 10g sesame oil, 80g apple jam, 15g honey,
10g oyster sauce
【Method】
1. Marinate pork loin with condiments at least 1 hour. (pic 1)
2. Heat 80g oil in wok, sauté trio color capsicums until fragrant, dish out. (pic 2)
3. Keep some oil in wok, sear pork loin until both sides turns brown. (pic 3-4)
4. Mixes sauce ingredients and bring to boil in wok.(pic 5)
5. Return pork loin in to the sauce and stir to mix; toss in other ingredients briskly and dish out, plate with lettuce to serve.(pic 6)
