姜黄饭与峇里式脏鸭子Nasi Kunyit & Balinese Bebek

材料A(黄姜饭):
五谷米2杯(洗净)﹑姜黄粉2茶匙﹑香茅2支(拍碎)﹑月
桂叶2叶﹑疯柑叶2叶﹑海盐½茶匙﹑黄糖½茶匙﹑纯椰油
1汤匙﹑纯净水2.5杯
材料B(峇里式烤鸭):
鸭全腿4只﹑米醋2汤匙﹑海盐1汤匙﹑食油1汤匙﹑香茅2
只﹑疯柑叶5-6叶﹑纯净水适量
材料B1(打成糊状):
蒜头6瓣﹑小葱头8颗﹑红辣椒1条﹑姜2片﹑姜黄粉1茶匙﹑
胡椒粉½茶匙
材料C(伴食酸洋葱):
小洋葱约12颗(切细片)﹑疯柑叶6叶(切碎)﹑青柠汁约1
颗份量﹑海盐½茶匙﹑纯椰油2汤匙(加热)
其他材料D :
自选炒鲜蔬适量﹑香煎天贝适量﹑香煎豆干适量﹑鲜蕃茄
块适量﹑鲜黄瓜片适量
制法 :
1. 将所有的材料A放进电饭锅内,拌匀后,煮熟,享用前
去除香茅、月桂叶和疯柑叶,即可。(图1-2)
2. 鸭腿用米醋和盐腌30分钟去腥后,用清水洗净,备用。

3. 冷油下锅,下B1的香料糊、香茅和疯柑叶,炒至发出香
味后,下作法1的鸭腿,翻炒。(图4)
4. 倒入纯净水至可淹盖鸭肉为止,中小火煮30分钟至鸭
肉熟透,熄火,放置一旁浸泡至少60分钟。(图5)
5. 将作法4的鸭腿捞起,沥干水份后,放入气炸锅内以
230度高温炸35分钟至表皮金黄即可,备用。(图6)
6. 将材料C中所有材料(除椰油外)混合均匀,然后倒入
加热的椰油,拌匀即可。(图7)
7. 将黄姜饭、烤鸭和其他材料盛入盘内,即可享用(参
考大图)。

INGREDIENTS A : (NASI KUNYIT)
2 cups 5 grains rice (washed), 2 tsp turmeric powder, 2
stalks lemon grass (smashed), 2 bay leaves, 2 kaffir lime
leaves, ½ tsp sea salt, ½ tsp brown sugar, 1 tsp coconut
oil, 2½ cups water
INGREDIENTS B1 : (BALINESE ROASTED DUCK)
4 pcs duck wholeleg, 2 tbsp rice vinegar, 1 tbsp sea salt,
1 tbsp cooking oil, 2 stalks lemongrass, 5-6 kaffir lime
leaves, some water
INGREDIENTS B2 : (pound into paste)
6 pips garlic, 8 shallots, 1 red chili, 2 slices ginger, 1 tsp
turmeric powder, ½ tsp pepper
INGREDIENTS C : (pickled onion)
12 shallots (sliced), 6 kaffir lime leaves (chopped), lime juice
from a lime, ½ tsp sea salt, 2 tbsp coconut oil(heated)
INGREDIENTS D : (pickled onion)
Free choice of fresh vegetables, seared tempeh, pan fried
bean curd, tomato pieces, cucumber slices
Method :
1. Put all ingredients A into rice cooker, mix well, cook,
remove lemongrass, bay leaf and kaffir lime leaves
before serving. (pic 1-2)
2. Marinate duck whole leg with vinegar and salt for 30
minutes; and then rinsed with water and set aside. (pic 3)
3. Heat coconut oil in wok, add in B1 paste, lemongrass
and kaffir lime leaves, stir-fry until aromatic; toss in
duck whole leg. (pic 4)
4. Pour water to cover the duck meat, boil for 30 minutes
in medium and small heat until the duck is cooked
thoroughly, turn off heat and set aside for at least 60
minutes to simmer. (pic 5)
5. Remove duck whole leg from wok, drain and then fry in
air fryer at 230°C for 35 minutes until the skin is golden
brown. (pic 6)
6. Mix all the ingredients C (except coconut oil), then pour
in the heated coconut oil and mix well. (pic 7)
7. Put turmeric rice, roasted duck and other ingredients
into the plate and enjoy.
