娘惹炒面Mee Goreng Nyonya Style

【材料】
金旦面300克、食油3汤匙、辣椒泥1汤匙、虾米2汤匙、菜脯碎1汤匙(洗净)、鸡胸肉150克(切丁)、大葱1⁄2粒(切丝)、包菜50克(切丝)、韭菜30克(切段)、酸柑2粒(挤汁)、红辣椒1条(切丝)青辣椒1条(切丝)

【酱汁】混合
酱油2汤匙、黑酱油1⁄2茶匙、番茄酱3汤匙、蒜茸辣椒酱2汤匙,盐和胡椒粉适量、白糖1茶匙

【装饰材料】
炸油葱1汤匙、酸柑1粒(切瓣)

【做法】
1.用冷水浸泡金旦面至略软后滴干。
2.起锅热油,把辣椒泥炒一会后加入虾米和菜脯,炒香后加入鸡肉炒匀 。
3.加入金旦面和大葱丝,炒均后拌入酱汁炒均。
4.加入包菜,韭菜及酸柑汁,炒均后加入辣椒丝,再炒均。
5.盛出炒面,撒上装饰料即可上桌。

【Ingredients】
300g CINTAN Non-fried Noodles, 3 tbsp oil, 1 tbsp chilli paste,2 tbsp dried shrimps, 1 tbsp chopped pickled radish (choy poh,rinsed), 150g diced chicken breast, 1⁄2 onion (sliced thinly), 50g cabbage (sliced),30g chives (cut into sections), 2 limes (squeeze for juice), 1 red chilli (sliced), 1 green chilli (sliced),

【Sauce】combined
2 tbsp light soy sauce, 1⁄2 tsp dark soy sauce, 3 tbsp tomato sauce, 2 tbsp chilli garlic sauce, salt and pepper to taste, 1 tsp sugar

【Garnishing】
1 tbsp shallot crisps, 1 lime (cut into wedges)

【Method】
1.Soak CINTAN Non-fried Noodles in cold water until slightly softened. Drain well.
2.Heat oil in a wok, add chilli paste and fry for a while. Add in dried prawns, pickled radish. Stir-fry briskly until fragrant. Add chicken fillet and fry well again.
3.Add CINTAN Noodles and onion. Toss well then add combined sauce ingredients. Fry well.
4.Add cabbage, chives and lime juice. Toss and fry briefly. Add chillies and stir-fry well to combine.
5.Dish out and serve with garnishing.
