客家小炒皇Hakka Stir-fried King

【材料】
虾米50克、韭菜花300克、银鱼仔40个克红罗卜30克、鱿鱼丝40克、葱段、红椒丝和姜丝一汤匙、葱头茸一茶匙

【调味料】
盐1茶匙,鸡精粉1茶匙

【做法】
1.将韭菜花洗净切段备用,虾米洗净汆烫备用,红萝卜洗净切片备用。
2.鱿鱼丝和银鱼洗净泡软备用。
3.起油锅,将鱿鱼丝、银鱼和虾干炸香备用。
4.把葱头茸、姜丝和红椒丝用大火爆香,
5.倒进韭菜花和红罗卜大火快炒拌均匀再将鱿鱼丝,银鱼和虾干回锅拌炒均匀。
6.把所有调味料加进锅里快炒盛起,即可上桌享用。

【Ingredients】
50g dried shrimp, 300g chive flower, 40g tiny anchovies, 30g carrot, 40g shredded dried squid, 1 tbsp each of spring onion blocks, shredded red chilli & shred ginger, 1 tsp chopped shallot

【Seasoning】
1 tsp salt, 1 tsp chicken powder

【Method】
1.Cut chive flower into blocks; wash dried shrimp and blanch; wash carrot and sliced.
2.Soak dried squid and anchovies until soften.
3.Heat oil in wok, sauté dried squid, anchovies and dried shrimp until fragrant.
4.Sauté shallot, ginger and red chilli until fragrant.
5.Add in chives flower and carrot and stir-fry with high heat, and then toss in dried squid, anchovies and dried shrimp.
6.Add in all seasoning and stir to mix, dish out.
