客家烤面Baked Hakka Mee cups

【材料】
2 片生宽面(约110克)、葱头油适量(拌面)

【配料】
猪肉碎200克(以1⁄2茶匙生粉和少许胡椒粉腌妥)、蒜头4瓣(剁碎)、食油2汤匙、酱油1汤匙、蚝油1汤匙、鱼露1汤匙、鸡粉1⁄2茶匙、清水125-150毫升、麻油适量、cheddar芝士茸150克

【装饰】
腌青辣椒适量、青葱粒1-2汤匙、猪油渣适量

【做法】
1.用加了油的滚水烫面至刚熟,滴干后分别装在2个碗里。
2.起锅热油,以中高火爆香蒜头,然后加入肉碎炒均,再加入清水,鸡粉及酱油,小火焖煮8-10分钟。(图1-2)
3.烤面做法:把烫熟的面条装入松饼模具里至满(烤熟后面条会下陷)。(图3)
4.在面条上撒芝士茸,然后铺入猪肉碎。(图4)
5.撒入更多的芝士茸,然后放入烤炉里烤约10分钟或至芝士溶解。(图5)
6.从烤炉取出烤面后撒入少许青葱粒,也可直接配腌青辣椒吃。(图6)

【Ingredients】
2 pieces non-fried broad noodles ( approx. 110g), some shallot oil to toss noodles

【Sub-Ingredients】
200 g minced pork (marinated with 1⁄2 tsp corn flour and a dash of pepper), 4 cloves garlic(minced), 2 Tbsp cooking oil, 1 Tbsp light soy sauce, 1 Tbsp oyster sauce, 1 Tbsp fish sauce, 1⁄2 tsp chicken powder, 125 – 150ml water,  a few drops of sesame oil, 150g grated cheddar or more

【Garnishing】
Pickled green chilies, 1-2 tbsp spring onion(sliced), crispy Pork lard & oil

【Method】
1.Scud the noodles with some oil in boiling water until al dente. Drain and divide into two bowls.
2.In a large wok, heat the oil over medium high heat, saute garlic until fragrant. Add in minced pork and stir fry before adding water, chicken powder and light soy sauce and simmer over low heat for 8-10 minutes. (pic 1-2)
3.To prepare noodles: Place the scalded noodles into each muffin cavity till full (note: as once baked the noodles will go down).(pic 3)
4.Sprinkle noodles with cheddar cheese, then top with the minced pork.(pic 4)
5.Drizzle more cheese over and bake for 10 minutes in preheated oven until the cheese melts.(pic 5)
6.Top some spring onions once out from the oven. Serve immediately with pickled green chilies if wished.(pic 6)
