家乡浓情肉 Country Style Braised Pork Belly

材料 :
五花连皮肉600克、面豉酱1½汤匙、辣椒糊1½汤匙、黄糖3汤匙、虾膏1汤匙、蒜茸1汤匙
调味料 :
生抽1汤匙、老抽1汤匙、麻油1汤匙、味精½茶匙
做法 :
① 五花肉切块,放入沸水中川烫,捞出备用。
② 烧热2汤匙油,爆香蒜茸、面豉酱及辣椒糊。(图1)
③ 加入五花肉一起炒匀,并加入虾膏、黄糖和调味料拌炒。(图2-3)
④ 注入水过一半猪肉煮滚后,转小火盖上焖煮45分钟,至汁收干便可。

INGREDIENTS :
600g pork belly with skin, 1 ½ tbsp soy bean paste,1 ½ tbsp chili boh, 3 tbsp palm sugar, 1 tbsp shrimp
paste, 1 tbsp chopped garlic
SEASONING :
1 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp. sesame oil, ½ tsp MSG
METHOD :
1. Cut pork belly into pieces and then blanch pork belly in boiling water; drain.
2. Heat 2 tbsp oil in wok, sauté garlic, soy bean paste and chili boh until fragrant. (pic 1)
3. Add in pork belly and stir-fry, toss in shrimp paste, palm sugar and seasoning. (pic 2-3)
4. Pour in water that enough to cover half of the meat, once boiled, turn to low heat and simmer for 45 minutes or until gravy reduced.
