山东蒸银鳕鱼 Steamed Cod Fish In ShanDong Style

【材料】
银鳕鱼600克(洗净)
【酱料】
子姜2块(拍扁切碎)、蒜米3瓣(剁碎)、红辣椒1⁄2条 (剁碎)、生葱1条(切粒)
【调味料】
A:鸡精粉1茶匙、盐1⁄2 茶匙、 糖1⁄3茶匙、绍兴酒1汤匙、清水1汤匙
B:生抽2汤匙、热水2汤匙
【做法】
1. 把全部剁碎材料放进大碗,加入调味料A,混合均匀。(图1-3)
2. 将调味料 B混合搅拌均匀备用。
3. 把处理好的银鳕鱼放在蒸盘,连同酱料放进蒸炉里盖好,用大火蒸8 分钟。(图4-5)
4. 取出鳕鱼,淋上酱料及调味料,即可上桌。(图6)


【Ingredients】
600g cod fish (clean and wash)
【Sauce Ingredients】
2 pcs young ginger(smash & chopped), 3 pips garlic(chopped), 1⁄2 red chili(chopped), 1 stalk spring onion
【Seasoning】
A:1 tsp chicken powder, 1⁄2 tsp salt, 1⁄3 tsp sugar, 1 tbsp Chinese cooking wine, 1 tbsp water
B:2 tbsp soy sauce, 2 tbsp hot water
【Method】
1. Combine all chopped sauce ingredients in a big bowl, add seasoning A to mix well.(pic 1-3)
2. Mixes seasoning B in a small bowl, set aside.
3. Arrange cod fish and sauce in steaming plate, steam in high heat for 8 minutes.(pic 4-5)
4. Dish out, sprinkle sauce ingredients and seasoning B over.(pic 6)
