山药薯泥烤肉饼Baked Shanyao Mashed Potato Hamburger

【材料】
猪肉碎300克、山药100克、马铃薯2粒、马斯顿芝士20克

【腌料】
花雕酒2汤匙、盐½茶匙、青葱汁1汤匙、姜汁1茶匙、胡椒粉¼茶匙、盐和糖适量、酱油1茶匙、清水5汤匙、生粉1汤匙、鸡蛋1粒

【配料】
红萝卜、青、红、黄灯笼椒、洋葱、樱桃番茄各少许

【做法】
1.用所有腌料腌猪肉碎,搅拌至猪肉起胶,然后置放至少1小时。(图1-2)
2.把山药洗净蒸20分钟后去皮,以搅拌器搅拌至细滑,以少许盐和胡椒粉调味。(图3-4)
3.马铃薯以滚水煮30分钟后压成薯泥,然后把山药泥加入混合。(图5-6)
4.把烤炉预热至180°C,猪肉碎做成2粒汉堡形状,放入烤炉烤25分钟。(图7)
5.从烤炉取出汉堡,淋上山药薯泥,再铺上切条的芝士。(图8)
6.再入烤炉,以200°C烤10分钟或至芝士转金黄色即可。
7.配上烤杂蔬即可上桌。

【Ingredients】
300g minced meat, 100g Shanyao (fresh Huaishan), 2 potatoes, 20g Maasdam cheese

【Condiments】
2 tbsp Chinese cooking wine, ½ tsp salt, 1 tbsp spring onion juice, 1 tsp ginger juice, ¼ tsp pepper, dash of salt & sugar, 1 tsp soy sauce, 5 tbsp water, 1 tbsp corn flour, 1 egg

【Sub-Ingredients】
Some carrot, green, red & yellow capsicum, onion, cherry tomato (pls refer to Grilled Assorted Vege for the method)

【Method】
1.Marinate mincemeat with all condiments and blend until springy; keep for at least 1 hour. (pic 1-2)
2.Wash Shanyao and steam for 20 minutes; and then blend into puree with blender; season with dash of salt and pepper. (pic 3-4)
3.Hard boil potatoes for 30 minutes, mash it and refer method from Baked Portuguese Chicken; and then mix it with Shanyao puree. (pic 5-6)
4.Pre-heat oven at 180°C, shape mincemeat into 2 hamburger form, grill in oven for 25 minutes.(pic 7)
5.Remove hamburger from oven, pour Shanyao mashed potato over, spread cheese on top. (pic 8)
6.Bake in oven again at 200°C for 10 minutes or until the cheese turns golden brown.
7.Serve with grilled assorted Vege.
