干炒家乡面Stir-fried Kah Hiong Noodles

【材料】
干面300克、麻油1/2茶匙、食油1/2茶匙、鸡肉150克(切粒)、香菇20克(浸泡后切丝)、小葱头1粒(剁碎)、食油1汤匙、鸡高汤1/2杯

【装饰】
青葱1棵(切粒)、红辣椒(切粒)、芫荽碎少许、菜心叶100克(汆烫)

【调味料】
蚝油2汤匙、酱油1汤匙、白糖1/2茶匙或适量、黑酱油1/4茶匙、胡椒粉1/4茶匙、麻油1茶匙、浓缩鸡精粉1茶匙

【勾芡】
生粉1茶匙、清水1汤匙

【做法】
1.把干面放入滚水中,加入食油和麻油,煮约3分钟即可盛出沥干水。
2.起锅热1汤匙食油,把葱头爆至香和转金黄色后,加入鸡肉、香菇鸡调味料。炒匀后倒入鸡高汤,煮4-5分钟后勾芡。
3.把煮好的面放在碟子里,把鸡肉香菇汁倒在面上,排入菜心,再撒入青葱粒、芫荽粒及辣椒粒即可。

【Ingredients】
300g Dried Noodles, 1/2 tsp sesame oil, 1/2 tsp oil, 150g chicken fillet(diced), 20g dried Chinese mushrooms(soaked and shredded), 1 shallot(chopped), 1 tbsp oil, 1/2 cup fresh chicken stock or water

【Garnishing】
1 stalk spring onion(chopped), some diced sliced fresh red chilli, some chopped coriander leaves, 100g mustard leaves(choy sum, blanched)

【Seasoning】
2 tbsp oyster sauce, 1 tbsp light soy sauce, 1/2 tsp sugar or to taste, 1/4 tsp thick soy sauce, 1/4 tsp pepper, 1 tsp sesame oil, 1 tsp concentrated chicken stock

【Thickening】
1 tsp cornflour, 1 tbsp water

【Method】
1.Drop Dried Noodles into boiling water. Add oil and sesame oil into the boiling water.Simmer for 3 minutes.Drain well and set aside.
2.Heat wok with 1 tbsp oil and sauté shallots until fragrant and golden. Add chicken, mushrooms and seasoning.Stir-fry well to combine.Pour in fresh chicken stock or water and bring to the boil.Cook for 4-5 minutes. Add thickening.
3.To serve: Put prepared noodles into individual serving plates. Add chicken and mushrooms sauce and serve with blanched choy sum.Garnish with chopped spring onion, coriander leaves and red chilli.
