当归节瓜夹Layered Hairy Melon

【材料】
节瓜(毛瓜)1条、印尼番薯片(炸熟)、马铃薯8片(炸熟)、香菇2朵(煮入味)切8片

【调味料】
盐1/2茶匙、糖1/2茶匙、浓缩斋汤1茶匙、素蚝油1茶匙、麻油少许、当归5克(切片)、杞子1大匙、水1饭碗、粟粉1大匙

【做法】
1.节瓜去皮,对半切开,每段切3/4寸长,再切1/2公分厚片,但不要切断,用油炸半熟,捞起。
2.每段夹入番薯片、马铃薯片和香菇片,排入深碟中。
3.煮滚调味料淋入节瓜夹中,隔水蒸20分钟至瓜软身即成。

【Ingredient】
1 whole Hairy melon(JIE GUA), 8 slices Indonesian sweet potato, 8 slices potato (both deep fried), 2pcs mushroom (braised and sliced into 8pcs)

【Sauce】
1/2 tsp salt, 1/2 tsp sugar, 1 tsp concentrated mock chicken stock, 1 tsp vegetarian oyster sauce, drops of sesame oil, 5g DANG GUI (sliced), 1 tbsp GOU QI, 1 bowl water, 1 tbsp corn flour

【Method】
1.Skin hairy melon, halve and cut into 3/4 inch blocks and then carve it at every 1/2cm but keep the flesh intact, then deep fry until half cooked.
2.Sandwich the melon with sweet potato, potato and mushroom slice in between and place in plate.
3.Boil the sauce and pour it over the layered melon, steam for 20 minutes until the melon is soften.
