忌廉香芋包 Cream Yam Bun

包皮材料
面粉300g、白糖65g、酵母6g、发粉4g、白油20g、清水80g
馅料
去皮芋头300g、椰浆100毫升、白糖120毫升、忌廉100毫升、玉米粉30g、黄油60g、紫色食用色素少许
做法
1 芋头切薄片,蒸熟压成泥备用。(图1)
2 热锅后放入黄油溶解,加入芋泥、椰浆、白糖、忌廉煮至细滑后调色,最后用玉米粉勾芡盛出。(图2-4)
3 把全部包皮材料一起搅拌成面团备用。(图5)
4 取20克面皮,包入20克馅料,搓成圆形,等待发酵后,蒸5分钟即可。(图6-8)

PASTRY INGREDIENTS
300g plain flour, 65g sugar, 4g baking powder, 20g shortening, 80g water
FILLING
300g peeled yam, 100ml coconut milk, 120g sugar, 100g cream, 30g corn flour, 60g margarine, some
purple coloring
METHOD
1 Slices yam and steam in steamer till soft, smash and set aside. (pic 1)
2 Heat margarine in wok, add in cooked yam, coconut milk, sugar and cream, cook until cream
mixture smooth, add in coloring and corn flour
for thickening, dish out. (pic 2-4)
3 Mixes all pastry ingredients and knead into smooth dough. (pic 5)
4 Take 20g dough to wrap with 20g filling, shape into balls, let rise and then steam for 5 minutes, done. (pic 6-8)
