意大利千层肉酱Lasagna

【馅料材料】
橄榄油1⁄3杯、月桂叶2片、蒜头2瓣(剁碎)、大葱1粒(切片)、红萝卜200克(去皮剁碎)、西芹2枝(剁碎)、牛肉碎250克、猪肉/鸡肉碎250克,清水/酒1
杯、番茄250克(剁碎)、番茄膏1⁄4杯、鸡粉1茶匙、白糖1汤匙、黑胡椒粉1茶匙

【白酱材料】
牛油125克、普通面粉100克、鲜奶1杯、淡奶1罐、清水1⁄2 杯、胡椒粉少许千层面皮1盒(400克)、cheddar/mozzarella芝士茸200克、耐热碟、额外3汤匙牛油

【馅料做法】
1.起锅热油,把蒜头、月桂叶及大葱爆香。加入红萝卜和西芹,煮至软身。(图1-2)
2.加入肉碎,不停搅拌,弄松肉碎。加入番茄,酒或清水,鸡粉及番茄膏。(图3)
3.最后加入调味料,小火焖煮15分钟至干水即可。

【白酱做法】
以中火溶解牛油,加入面粉炒3分钟,不停搅拌防止结块。慢慢加入牛奶,搅拌约5分钟至稠后加入胡椒粉。(图4-5)

【组合】
1.把烤炉预热至200℃。
2.在碟子涂油,放入一片千层面皮,太大需裁剪。
3.倒入1⁄2杯馅料,铺上白酱。(图6-7)
4.再铺一层千层面皮。重复步骤3次。(图8)
5.最上一层铺上馅料再铺白酱,撒上芝士和少许牛油,放入烤炉烤30分钟至芝士转金黄色。
6.取出待10分钟后才吃。

【Filling ingredients】
1⁄3 cup olive oil, 2 bay leaves, 2 cloves garlic(chopped), 1 big onion(sliced), 200g carrot(peeled & chopped), 2 celery stalks(chopped), 250 g lean ground beef, 250 g minced chicken/pork meat, 1 cup wine / water, 250 g fresh red tomatoes(chopped), 1⁄4 cup tomato paste, 1 tsp chicken stock granules, 1 tbsp sugar, 1 tsp ground black pepper

【Bechamel Sauce ingredients】
125 g butter, 100 g plain flour, 1 cup fresh milk, 1 can evaporated milk, 1⁄2 cup water, dash of pepper 1 box [400g] instant Lasagna noodles, 200g cheddar/mozzarella cheese(shreadded), Baking dish(greased)
3 tbps extra Butter(for topping)

【Method For filling】
1.Heat olive oil, saute garlic, bay leaf, onions until fragrant. Add carrots, celery & cook until soft, stirring often.(pic 1-2)
2.Add meat, stirring often breaking up lumps with the back of a wooden ladle.Add in chopped tomatoes, wine/water, chicken stock granules & tomato paste.(pic 3)
3.Add seasoning and simmer for 15 minutes until almost all the liquid has evaporated.

【To make béchamel sauce】
Melt butter in a heavy saucepan over medium heat.Add flour & cook for 3 minutes, stirring frequently to prevent any lumps.Gradually whisk in milk & cook until sauce thickens about 5 minutes. Add a dash of pepper.(pic 4-5)

【To assemble lasagna】
1.Preheat oven to 200 ℃.
2.Grease the bottom & sides of baking dish. Place a layer of lasagna sheets in dish, trimming if necessary to fit. Spread 1⁄2 cup filling over the lasagna sheets, spread béchamel sauce over.(pic 6-7)
3.Then repeat with the lasagna sheets again. Repeat steps 3 more times.(pic 8)
4.Lastly top with a layer filling & spread remaining béchamel sauce over.Sprinkle with cheese & drizzle with some butter.Bake for 30 minutes until lasagna is thoroughly cooked & cheese golden.
5.Let stand 10 minutes before serving.
