意式南瓜千层面Pumpkin Lasagna with Béchamel Sauce

【材料】
千层面皮1盒(擀平)、南瓜肉1200克(蒸熟捣烂)、牛油50克、食油3汤匙、大葱2粒(剁碎)、白糖3汤匙,桂皮粉1/2汤匙、香草精1/4茶匙、盐适量、Mozzarella芝士250克

【白酱材料】
牛油50克、面粉50克、牛奶750克、盐和胡椒粉适量
10 X 10寸烤盘1个(涂油)

【做法】
1.起锅热牛油,把大葱炒至微黄。(图1)
2.加入南瓜泥,搅拌均匀。(图2)
3.加入白糖、桂皮粉、香草精及盐,试味后置放一旁。(图3)
4.白酱做法:另外热锅煮牛油,加入面粉,以中火炒面粉至金黄色,然后加入牛奶,以手打器搅拌以防结粒,不停搅拌至稠,以盐调味。(图4)

【组合】
把一层千层面铺盘底,然后填上一层南瓜料、一层白酱再铺千层面;重复步骤至材料用尽,最上一层铺芝士,然后进烤炉以190℃烤45分钟,待凉30分钟即可享用。(图5-7)

【Ingredients】
1 box Oven Ready Lasagna (rolled flat) ,1200g pumpkin flesh(steamed till tender & mashed), 50g butter, 3 tbsps cooking oil, 2 big onions(chopped), 3 tbsp sugar ,1/2 tbsp Cinnamon, 1/4 tsp vanilla , salt as needed, 250g Mozzarella cheese

【Béchamel Sauce】
50g butter, 50g Flour, 750 ml milk, salt and pepper as needed
10 x10 inches baking tray (greased)

【Method】
1.Sauté minced onions with butter and oil until onions are caramelized.(pic 1)
2.Add the mashed pumpkin to onions and mix well. (pic 2)
3.Add sugar, cinnamon powder, vanilla essence and season with salt to taste; set aside. (pic 3)
4.For Béchamel Sauce: In another medium sauce pan, heat butter and add in flour, stir-fry over medium heat and keep stirring until golden brown. Add milk to the flour mixture and using a wire whisk stir to avoid having lumps. Stir until thicken, season with salt.(pic 4)

【To build the Lasagna】
Lay lasagna sheets in pan, top with pumpkin mixture, béchamel sauce and then lasagna sheets again; repeat steps and lastly topped with the Mozzarella cheese. Bake at 190℃ for 45 minutes and let cool for 30 minutes. (pic 5-7)
