日式南蛮炸鸡Nanban Chicken

【材料】
去骨大鸡腿肉3片、海盐适量、黑胡椒粉适量、鸡蛋液1颗、普通面粉100克、椰油适量、伴菜适量

【南蛮醋材料】
酱油3汤匙、米醋4汤匙、黄糖3汤匙、蜜糖1汤匙

【塔塔酱材料】
洋葱1颗(切丁)、水煮蛋2颗(揉碎)、美奶滋2汤匙、蕃茄酱2汤匙、海盐½茶匙、黑胡椒粉适量

【做法】
1.将所有南蛮醋材料混合均匀,小火煮至滚后,离火待凉,备用。(图1)
2.将所有塔塔酱材料混合均匀,放入雪柜冷藏,备用。(图2-3)
3.将鸡肉洗净、抹干水份,下海盐、黑胡椒粉和鸡蛋液,腌30分钟后裹上一层面粉,静置在旁,备用。(图4)
4.开中火,冷油下锅,油温升高起泡时,即可将做法3的鸡肉放下去慢火炸至金黄。(图5)
5.将炸熟的鸡排切块,与其他的配菜摆在盘子上,淋上南蛮醋,配以塔塔酱一起享用。

【INGREDIENTS】
3 sets Boneless chicken whole leg, dash of sea salt and black pepper, 1 beaten egg, 100g plain flour, oil for deep frying, some salad greens

【SAUCE】
3 tbsp soy sauce, 4 tbsp rice vinegar, 3 tbsp palm sugar, 1 tbsp honey

【TARTAR DRESSING】
1 onion (diced), 2 hard boil egg (minced), 2 tbsp mayonnaise, 2 tbsp tomato sauce, ½ tsp sea salt, dash of black pepper

【METHOD】
1.Mixes all sauce ingredients and cook in low heat until boiled, set aside to cool down. (pic 1)
2.Mixes all tartar dressing ingredients and keep in fridge. (pic 2-3)
3.Wash chicken meat, pat dry and marinate with sea salt, black pepper and egg sauce for 30 minutes; and then coat with
plain flour and set aside. (pic 4)
4.Heat oil in wok until very hot, put in chicken meat and deep fry in low heat until golden brown. (pic 5)
5.Slice fried chicken chop arrange in plate with salad greens; pour sauce over and serve with tartar dressing.
