星巴克牧羊人派Starbucks Shepherd Pie

【派皮材料】
低筋面粉160克、糖粉50克、冷藏牛油80克(切成方块)、鸡蛋1个

【派皮做法】
1.将面粉和糖粉过筛,加入冷藏牛油,用手将牛油捏碎和面粉混合均匀。
2.加入蛋液,揉成面团后,放入雪柜冷藏至少一个小时,备用。

【黑胡椒鸡馅料材料】
鸡肉丁200克、罐头蘑菇5粒(切片)、蚝油1茶匙、黑胡椒1/2茶匙、罐头蘑菇白酱(Carbonara Mush-room)200克、盐适量

【做法】
1.鸡肉丁加入蚝油和黑胡椒,腌15分钟。
2.烧热油锅,放入鸡肉和蘑菇,翻炒至均匀,加入罐头白酱煮至滚,即可熄火上锅,备用。

【顶料】
马鈴薯400克(蒸熟,压成薯泥)、牛油1小塊、鮮奶油100毫升、白胡椒粉1茶匙、盐1茶匙

【顶料做法】
薯泥加入所有的材料,搅拌均匀后,装入花嘴袋,备用。

【派做法】
1.将烤箱预热至180℃。
2.用檊面棍将派皮面团檊成约3mm厚度的面皮,再用一个大碗口切割出圆形,铺在玛芬模子上,将面皮紧贴玛芬模上,用叉子在派皮上刺洞。
3.在派皮上铺上烤纸,再放上一些压派石,烤约15分钟后,移开压派石,再烤10分钟,备用。
4.将黑胡椒鸡馅料舀入派皮里,挤上马铃薯泥,再送进烤箱,烤15分钟或直到马铃薯泥呈金黄色即可,趁热享用。

 

【Pastry Ingredients】
160g super fine flour, 50g icing sugar, 80g cold but-ter (cut cubes), 1 egg

【Method for pastry】
1.Sift flour and icing sugar in mixing bow, add in cold butter, rub with finger tips to form bread crumb.
2.Add in egg and knead into dough, keep in fridge for 1 hour.

【Black pepper Chicken filling】
200g chicken cubes, 5 pcs champignons mushroom (sliced), 1 tsp oyster sauce, 1/2 tsp black pepper, 200g canned Carbonara Mushroom, dash of salt

【Method】
1.Marinate chicken cubes with oyster sauce and black pepper for 15 minutes.
2.Heat oil in wok, stir-fry chicken cubes and mushroom until well mixed, add in Carbonara Mushroom and bring to boil, dish out.

【Topping Ingredients】
400g potato (steamed and mashed), 1 small portion of butter, 100ml fresh cream, 1 tsp pepper, 1 tsp salt

【Method】
Mixes all ingredients and store in piping bag with nozzle.

【Method for Shepherd Pie】
1.Pre-heat oven to 180℃.
2.Pin roll the dough into 3mm thick pastry and then cut out round shape, press firmly into muffin mould; follow by pinching hole on the surface with folk.
3.Place greased proof paper on top of pastry and sit with heavy stone, bake in oven for 15 minutes; remove stones and continue baking for another 10 minutes.
4.Place black pepper chicken filling into baked pie, pipe in mashed potato and bake in oven again for 15 minutes or until golden brown. Serve hot.
