暹酱煎鱼肉Siam Seared Fish

【材料】
红哥鱼肉300克、面粉适量

【酱汁材料】
梅酱2汤匙、鱼露2汤匙、蒜茸50克、指天椒5条、酸柑汁2汤匙、细糖2汤匙、清水1汤匙

【装饰】
葱花少许、芫茜叶少许、红辣椒茸少许、枫柑叶丝2片

【做法】
1. 把鱼肉拍上薄薄一层面粉。
2. 热油,将鱼片煎炸至金黄色,捞起沥干油,盛碟中。(图1)
3. 把所有酱汁料混合拌匀,淋上鱼身上,撒上装饰料即可。(图2-4)

【INGREDIENT】
300g Red snapper fillet, some plain flour

【SAUCE INGREDIENTS】
2 tbsp plum sauce, 2 tbsp fish sauce, 50g chopped garlic, 5 chili padi, 2 tbsp lime juice, 2 tbsp castor sugar, 1 tbsp water

【GARNISHING】
Some chopped spring onion, coriander, juliennes red chili and kaffir lime leaf

【METHOD】
1. Coat fish fillet with a thin layer of plain four.
2. Heat oil in wok, deep fry the fish fillet until golden brown, drain and place in serving plate. (pic 1)
3. Mixes all sauce ingredients and pour over the fish, garnish and done. (pic 2-4)
