月亮虾饼 Moonlight Pancake

材料:

鸡胶500克、虾470克(取一半剁碎)、鱿鱼160克(打成胶)、大黄葱240克(剁碎)、蟹柳160克(切粒)、青
葱60克(切粒)、红萝卜500克(打碎)、沙葛130克(切碎)、薄饼皮数片

调味料:
盐½茶匙、胡椒粉1½茶匙、海鲜粉1½茶匙、鱼精粉1汤匙、麻油15毫升、葱油1汤匙、蛋1粒、鱼露1茶匙、面
粉9克、粟粉3汤匙、虾油1½汤匙

做法:
1. 先将沙葛、红萝卜、大葱和青葱剁碎备用。(图1-2)
2. 在一个大碗内将鸡胶、虾胶和鱿鱼胶捞匀,再加入其余材料和调味料搅拌均匀成滑馅料。(图3-8)
3. 薄饼皮铺好,铺上混合馅料,再铺上虾,盖上另一片的薄饼皮,用叉子叉几个洞。(图9-10)
4. 镬内热油,放入薄饼以中火煎约3分钟后翻面,继续炸至虾饼颜色呈金黄色时即可起锅切片,食用
时佐适量辣椒酱即可。(图11-12)

Ingredients:

500g chicken paste, 470 shrimp (take half to chopped finely), 160g squid (chopped into paste), 240g big yellow
onion (chopped), 160g crab stick(dice), 60g green onion(chopped), 500g carrot (dice), 130g yam bean
(chopped), some popiah wrap skin

Seasoning:

¼ tsp salt, 1½ tsp pepper, 1½ tsp seafood powder, 1tbsp fish powder, 15ml sesame oil, 1 tbsp onion oil, 1 egg, 1 tsp
fish sauce, 9g plain flour, 3 tbsp corn flour, 1½ shirmp oil

Method:

1. Chopped yam bean, carrot, onion and green onion, set aside. (pic 1-2)
2. In a big bowl, mix chicken, squid and shrimp paste together, add in remaining ingredients and seasoning,
mx well until it becomes a paste with smooth and shiny consistency. . (pic 3-8)
3. Spread mixture on a wrap, place shimp on top, cover with another piece of wrap., chopped a few holes
with a fork. (pic 9-10)
4. Heat up some oil in a frying pan on medium heat. When the oil is ready, put the shrimp cake in and
start frying for 3 minutes until both sides turn golden.Drain and cut in pieces, serve with chilli sauce. (pic
