杏仁鱼扒 ALMOND FISH & CARROT CHIPS

材料
鱼肉2 块(去皮切厚片)、干粟粉适量、鸡蛋1 粒(打散)、
杏仁片1⁄2 小碗、柠檬 1⁄2 粒(切块伴碟)
配料
红萝卜1 条(切粗条)、芫茜适量(切碎)
调味料
A: 盐1⁄2 茶匙、胡椒粉少许、姜汁1⁄2 汤匙、麻油1 茶匙
B: 麻油1 汤匙、黄糖1 汤匙、柠檬汁1⁄2 粒、清水1 汤匙
做法
1. 把鱼肉片加入调味料A,拌匀置放10 分钟。
2. 将鱼肉片裹上干粟粉,沾上鸡蛋液再沾上杏仁片,然后放入热油中炸至两
面熟黄,取出沥干油排碟。(图1-3)
3. 红萝卜条放入沸水中煮至软,捞出沥干待用。
4. 把调味料B 煮至红糖溶解,加入红萝卜兜炒,撒入芫茜碎拌匀便可上碟,
配炸鱼片吃。(图4)

Ingredients
2 pcs fish fillet (thick slices), some corn flour, 1 egg (beaten),
1⁄2 bowl almond flakes, 1⁄2 lemon (cut wedges for garnishing)
Sub Ingredients
1 carrot (cut into raw strips), some chopped coriander
Seasoning
A: 1⁄2 tsp salt, dash of pepper, 1⁄2 tbsp ginger juice, 1 tsp sesame oil
B: 1 tbsp sesame oil, 1 tbsp brown sugar, 1⁄2 lemon(juice), 1 tbsp water
Method
1.Marinade fish fillet with seasoning A for 10 minutes.
2.Coat fish fillet with corn flour, and then dip in egg sauce and coat with almond
flakes; deep fry in hot oil until both sides turns golden brown, drain.(pic 1-3)
3.Boil carrot in boiling water until soften, drain.
4.Combine seasoning B in wok until sugar dissolved, toss in carrot until they
are well coated with sugar syrup, sprinkle in chopped coriander and dish out,
serve with fish. (pic 4)
