枸杞葡萄干蒸蛋糕 Steamed Wolfberry & Raisin Cake

材料
低筋面粉 180克
有机无铝发粉 1 茶匙
鸡蛋 5 颗
黄糖 80 克
海盐 ½ 茶匙
橄榄油 2 汤匙
枸杞 适量
葡萄干 适量

做法
1 枸杞和葡萄干用热水泡软,用纸巾吸干水份后,置一旁备用。
2 鸡蛋、黄糖和海盐用电动打蛋器打至松发。(图1)
3 加入橄榄油,接着分2次加入过筛的面粉和无铝发粉,然后轻轻
拌匀;(图2)
4 加入枸杞和葡萄干拌匀后,倒入耐热模具内,放入蒸笼以大火蒸
20分钟至全熟即可。(图4)

INGREDIENTS
180g Low-protein flour, 1 tsp organic baking powder, 5 eggs,
80g brown sugar, ½ tsp sea salt, 2 tbsp olive oil, some Gou
Qi, some raisin
METHOD
1 Soak raisin and GouQi with hot water, pat dry and set aside.
2 Beat eggs, brown sugar and sea salt with electric mixer till fluffy. (pic 1)
3 Add in olive oil, sifted organic baking powder and low-protein
flour in 2 intervals, mix well. (pic 2)
4 Add in Gou Qi and raisin, mix well, pour into heat-resistant
mold, steam with high heat for 20 minutes till cooked.(pic 4)
