柠檬芝士千层蛋糕Lemon Cheese Crepe

【千层面皮材料】
鲜奶500毫升、牛油60克、细糖30克、盐茶匙、A蛋6粒,普通面粉135克(过筛)、薯粉30克(过筛)、柠檬皮茸 (取自1-2
粒柠檬)
【柠檬芝士馅材料】
芝士鲜奶油250克(室温)、牛油125克(室温)、白糖100克、鲜奶油100克、柠檬皮茸 (取自1粒柠檬)
【面皮做法】
1.把牛油煮至溶后熄火。(图1)
2.将鸡蛋、白糖和盐混合,搅拌至糖溶解。加入鲜奶和筛过的粉料,搅拌均匀后加入溶解的牛油拌至细滑。(图2-3)
3.把面糊过筛在干净的容器,加入柠檬皮茸混匀。(图4-5)
4.把23公分不黏锅加热,涂少许油,舀入1杓的面糊,旋转锅子以让面糊覆盖整个锅面。
5.以小火煎至熟后翻转一次,取出放在净布上待凉。(图6)
6.重复步骤至面糊用完。过程中以保鲜膜或布巾盖着面皮以防干燥。
【柠檬芝士馅做法】
1.把鲜奶油打发后收入冰箱。
2.把芝士奶油、牛油及糖搅拌至松,然后加入发起鲜奶油和柠檬皮茸拌匀。
【组合】
1.把一片面皮铺平,涂上一层柠檬芝士馅,然后叠上一片面皮,再涂一层柠檬芝士馅,重复步骤至面皮用完。(图7-8)
2.收入冰箱,冷吃;吃前切块。

【Lemon Crepe batter】
500 ml fresh milk, 60 g butter, 30 g castor sugar, tsp salt, 6 “Grade A” eggs, 135 g plain flour(sifted), 30 g tapioca
flour(sifted), grated rind from 1-2 lemons,
【Lemon Cheese filling ingredients】
250 g cream cheese(at room temperature), 125 g butter(at room temperature), 100g sugar,100g whipped cream, grated rind of 1
lemon
【To prepare crepe】
1.Place butter in a saucepan over medium heat . Once butter melts,turn off heat.
2.Combine eggs, sugar & salt, stir until sugar dissolves. Fold in milk, sifted flours and melted butter.(pic 2-3)
3.Sieve the batter into a clean container, mix in the grated lemon rinds.(pic 4-5)
4.Heat a 9” non-stick pan, lightly grease pan, and pour a ladle of batter, swirling the pan to allow batter to cover the whole pan.
5.Cook over low heat, flipping crepe over once. Remove crepe & place onto a tea towel to cool.(pic 6)
6.Repeat until all the batter is used. Close with cling film or kitchen towel to prevent crepes from drying out.
【To prepare lemon cheese filling】
1. Beat the whipped cream till stiff & set aside in the refrigerator.
2. Beat cream cheese, butter & sugar until creamy. Mix the whipped cream & grated lemon rind.
【To assemble】
1. Lay a piece of crepe, spread some lemon cheese filling over & top
with another layer of crepe. Continue repeating until all is filled.(pic7-8)
2. Chill cake & serve cold; slice as and when needed.
