桶子油鸡 Soy Sauce Chicken

【材料】
A:全鸡腿3只、绍兴酒6大汤匙、水1⁄2碗
B:花椒1茶匙、八角6粒、桂皮2寸、丁香8粒、甘草3片、草果1粒
【调味料】
麻油1汤匙、生抽4汤匙、冰糖3汤匙、盐1茶匙、黑酱油1茶匙
【做法】
1. 以少许麻油炒香B料,加入调味料、清水和绍兴酒,以小火煮约20分钟做成卤汁。(图1-3)
2. 将鸡洗净后放入卤汁中转以小火焖30分钟,每烧10分钟必须将鸡腿翻转一次。(图4-5)
3. 反覆二至三次后取出待凉些涂上麻油即成。(图6)

【Ingredients】
A:3 Chicken whole legs, 6 tbsp cooking wine, 1⁄2 bowl water
B:1 tsp Chinese peppercorn, 6 pcs star anise, 2 inches cinnamon, 8 pips clove, 3 slices
GanCao, 1 pc CaoGuo
【Seasoning】
1 tbsp sesame oil, 4 tbsp soy sauce, 3 tbsp rock sugar, 1 tsp salt, 1 tsp dark soy sauce
【Method】
1. Sauté ingredients B with some sesame oil until fragrant, toss in all seasoning ingredients with
water and cooking wine, simmer in low heat for 20 minutes to obtain spiced gravy.(pic 1-3)
2. Wash chicken and add into the spiced gravy, simmer in low heat for 30 minutes. Make sure
turn every 10 minutes to prevent burning.(pic 4-5)
3. After turning 2-3 times, drizzle in sesame oil, done. (pic 6)
