梅菜烧卖Mui Choy Siew Mai

【材料】
云吞皮30片、蒸熟咸蛋黄2粒(压碎)、甜梅菜100克、五花肉150 克、蒜头4瓣(剁碎)、青豆30粒

【调味料】
粟粉1 1/2茶匙、蚝油1/2茶匙、酱青1汤匙、胡椒粉少许、麻油适量、鸡精粉1茶匙、糖1茶匙

【做法】
1.将梅菜洗净,切碎。(图1)
2.在锅内将梅菜碎干炒5分钟,拨开锅边,加3汤匙油,爆香蒜头碎,然后全部捞匀炒香,盛出。(图2-3)
3.将五花肉切片,剁碎,跟所有调味料拌匀。(图4-5)
4.最后加入炒香梅菜混合均匀。(图6)
5.将适量梅菜猪肉馅料放在云吞皮上,捏紧收出花口成烧麦形状。面上铺咸蛋黄,再放一粒青豆。(图7)。
6.将烧卖放入蒸锅蒸15分钟即可。(图8)

【lngredients】
30 pcs Wanton skin , 2 steamed salted egg yolk(crushed), 100g sweet Mui Choy, 150g pork belly, 4 pips garlic(chopped), 30g frozen peas

【Seasoning】
1 1/2 tsp corn flour, 1/2 tsp oyster sauce, 1 tbsp soy sauce, dash of pepper and sesame oil, 1 tsp chicken stock granule, 1 tsp sugar

【To prepare wanton】
1.Wash Mui Choy and chop finely.(pic 1)
2.Saute Mui Choy in dry wok for 5 minutes, and then move to the edge, add in 3 tbsp oil, saute garlic until fragrant, toss in all ingredients and stir fry until fragrant.(pic 2–3)
3.Slice pork belly and chop finely.Marinate with all seasoning ingredients.(pic 4–5)
4.Combined the meat with the Mui Choy and mix well. (pic 6)
5.Wrap some filling in wanton skin, close the opened wanton skin and fold up the edge by gently grabbing the filings into shape of Siew Mai, spread some salted egg yolk on top and garnish with 1 piece of pea.(pic 7)
6.Steam for 15 minutes, done.(pic 8)
