椒盐泡脆鱼虾蟹Chrispy Pepper Salt Seafood

【材料】
鱼肉100克(切片)、虾6只(修剪)、肉蟹2只、红辣椒茸1条、葱蒜茸1汤匙、青葱粒3汤匙、粟粉4汤匙、绍兴酒1汤匙

【椒盐】 炒香
五香粉1⁄2茶匙、幼盐1⁄2茶匙、味精1⁄2茶匙、花椒碎1茶匙

【腌料】
盐1茶匙、胡椒粉1⁄2茶匙、糖1茶匙、绍兴酒2汤匙、蛋白2粒

【做法】
1. 将海鲜处理洗净,加入腌料,捞匀置放10分钟。
2. 烧热炸油,把粟粉撒入海鲜拌匀,然后各别把海鲜投入炸至香脆,捞出沥油。(图1-2)
3. 镬中留油少许爆香葱蒜茸,加入炸海鲜翻炒均,再赞1汤匙绍兴酒炒香。(图3-4)
4. 洒入炒香椒盐、青葱粒及红辣椒碎,快速兜匀便可上碟。(图5)

【Ingredients】
100g fish (slices), 6 prawns (trimmed), 2 crabs, 1 red chili (chopped), 1 tbsp chopped garlic, 3 tbsp chopped spring onion, 3 tbsp corn flour, 1 tbsp cooking wine

【Pepper salt】(sauté)
1⁄2 tsp 5 spiced powder, 1⁄2 tsp salt, 1⁄2 tsp MSG, 1 tsp Szechuan peppercorn (bruised)

【Condiments】
1 tsp salt, 1⁄2 tsp pepper, 1 tsp sugar, 2 tbsp Chinese cooking wine, 2 egg white

【Method】
1. Clean and wash all seafood and marinate with condiments for 10 minutes.
2. Heat oil in wok, coat seafood with corn flour and then deep fry until crispy, drain.(pic 1-2)
3. Keep some oil in wok, sauté chopped garlic and shallot until fragrant; toss in fried seafood, drizzle in cooking wine.(pic 3-4)
4. Sprinkle pepper salt, chopped spring onion and red chili, stir well and dish out.(pic 5)
