椰浆饭小吃 Nasi Lemak Canapes

材料
白米2杯、椰浆4杯、班兰叶2片(打结)、盐适量
配料
日本青瓜(切长片)、水煮鹌鹑蛋(切片)、中虾20只(烫熟剥壳留尾)、炸江鱼仔
椰浆饭叁峇料
A : 食油50毫升,大葱1粒(切丝)、白糖1汤匙、盐适量
B : 红辣椒5条、石古仔5粒(浸泡)、辣椒干30条(浸泡)、小葱头8粒、蒜头1瓣、虾膏1茶匙、
食油75毫升
椰浆饭叁峇做法
1 将所有材料B放入电动搅拌机搅拌至细。
2 起锅热油,加入大葱和材料B炒至香并出油,加糖和盐调味。(图1)
做法
1 把所有椰浆饭材料放入电饭煲里煮至熟。
2 趁热把饭搅松,若饭不够软,可加入额外椰浆。
3 组合:鲜虾用少许油煎熟备用。(图2)
4 将日本青瓜刨成薄片做椭圆形状,以牙签固定。(图3-5)
5 将椰浆饭放入青瓜圈里,压平后放上叁峇、虾、蛋及炸江鱼仔即可。(图6-8)
6 可以随意放其他配料,但不能缺叁峇。

INGREDIENTS
2 cups long grain rice (washed), 4 cups coconut milk, 2 knotted pandan leaves, salt to taste
GARNISHING
Cucumber, hard boiled quails egg (sliced), 20 pcs or more medium sized prawns(boiled & tail kept
intact), deep fried anchovies
SAMBAL NASI LEMAK
A : 50 ml cooking oil, 1 big onion(sliced), 1 tbsp. sugar, salt to taste
B : 5 fresh red chillies, 5 candlenuts (soaked), 30g dry red chilies(soaked), 8 shallots, 1
clove garlic, 1 tsp roasted shrimp paste, 75ml cooking oil
TO MAKE SAMBAL NASI LEMAK
1 Blend all ingredients B in electric blender until fine.
2 Heat oil in a wok and cook ingredients B and onion slice over low heat till aromatic and oil
starts to separate. Season with sugar and salt. (pic 1)
METHOD
1 Place all rice ingredients into an electric rice cooker and cook until done.
2 Once rice is cooked quickly fluff up the rice and add more coconut milk if rice is not soft enough.
3 To assemble : Fried prawns with some oil till cooked. (pic 2)
4 Peel cucumber into long slices to make an oval shape securing with a toothpick at the edges.

5 Press nasi lemak into the cucumber casing, then top with sambal, prawn, hard boiled quail egg
& fried anchovy. (pic 6-8)
6 Each canapé can have a different topping but the sambal remains for all.
