榄菜排骨蒸南瓜Steamed Ribs with Chinese Pickled Olive

【材料】
榄菜2汤匙、排骨400克、南瓜1粒、蒜茸、姜茸各1茶匙、葱花适量、红辣椒丝适量

【调味料】
糖1/2茶匙、鱼露1/2茶匙、花雕酒1/2茶匙、麻油1/2茶匙

【做法】
1.把排骨洗净斩件氽烫备用。(图1)
2.把南瓜切开上端开盖做成盅状;去囊籽洗净备好。
3.起油锅爆香姜茸和蒜茸,把排骨加调味料以大火炒香,盛入南瓜盅内,铺上榄菜。
4.把南瓜盅放入蒸笼以大火蒸30分钟即可取出,撒上撒上青葱与红辣椒装饰。(图2-4)

【Ingredients】
2 tbsp Chinese pickled olive, 400g pork ribs, 1 whole pumpkin, 1 tsp each of chopped garlic & ginger, some chopped spring onion, red chilli (shredded)

【Seasoning】
1/2 tsp sugar, 1/2 tsp fish sauce, 1/2 tsp Chinese cooking wine, 1/2 tsp sesame oil

【Method】
1.Wash ribs and blanch in boiling water.(pic 1)
2.Open cut the top of pumpkin and seeded, use it as container.
3.Heat oil in wok, sauté garlic & ginger until fragrant, toss in ribs and stir-fry with seasoning in high heat till aromatic, transfer ribs into the pumpkin.
4.Steam pumpkin in high heat for 30 minutes, sprinkle chopped spring onion and red chilli over and serve. (pic 2-4)
