榴莲松饼 Durian muffins

材料A:

低筋或普通面粉160克(筛过) 、发粉1 1/2茶匙、盐1/2茶匙、牛油90克、菜油40克、细糖100克

材料B:

鸡蛋1粒(以叉打散) 、淡奶50毫升、清水50毫升、香草味香精

馅料:

优质榴莲果肉250克+1/2 汤匙糖

纸杯

做法:

  1. 把烤炉预热至180度,然后把纸杯排列在烤盘里。
  2. 把所有材料A放入电动搅拌器,搅拌成团,间隔加入牛油和菜油,至到搓成粗面团。
  3. 加入材料B,搅拌均匀。面糊出现疙瘩状况不必操心,因为搅拌太久松饼就松不了。
  4. 把1汤匙面糊倒入纸杯,然后上面加1茶匙榴莲肉,再加一汤匙面糊;重复步骤至填满。记得把榴莲肉放在中央。
  5. 把材料放入预热烤炉烤20-25分钟或至熟,插入竹签测试,以不沾物为熟。

Ingredients A:

160 gm. Cake / plain flour – sifted

1 1/2 tsp baking powder – sifted

1/2 tsp salt

90 g Butter

40 g margarine

100 gm castor sugar

 

Ingredients B:

1 egg, lightly beaten with a fork

50 ml evaporated milk

50 ml water

1 tsp vanilla essence

Filling:

250 g Durian meat + ½ Tbsp sugar

Paper cup liners

 

Method:

  1. Pre-heat oven @ 180* & line the paper cups in a muffin tray.
  2. Place all ingredients A into an electric food processor & pulse it until it forms breadcrumbs. Alternatively rub butter & margarine with the dry ingredients until it forms breadcrumbs.
  3. Pour in all the ingredients (B) and stir till just mixed. Do not worry if there are lumps as if beaten too much the muffin will become hard.
  4. Spoon a tablespoon of the mixture into paper cups, top up with a tsp of durian meat and then top up with another Tablespoon of batter. Remember to place the durian meat in the centre of the batter. Repeat till process finish.
  5. Bake in pre-heated oven for 20 to 25 mins or until cooked – tester inserted in the centre of the muffin comes out clean.
