榴莲派Baked Durian Pie

【馅料】
猫山王榴莲肉800克、白糖2-3汤匙、盐1/2茶匙、生粉30克、A蛋2粒、浓椰浆100毫升、白椰丝50克

【用具】
现买油酥面皮2片(12 X12寸)
10寸派盘(涂油)

【做法】
1.把烤炉预热至190℃。
2.油酥皮解冻后擀平,然后放入派盘里。(图1)
3.把第2片油酥面皮擀平,交叠在第一片面皮上,确保填满全部空隙,然后压紧以确保面皮紧贴派盘。(图2)
4.将猫山王榴莲肉及其余馅料混合,调整甜度。(图3-5)
5.把馅料倒在面皮上,然后放入烤炉烤45分钟或至金黄色。(图6-8)
6.趁派皮还酥时温吃。

【Filling Ingredients】
800 g musang king durian flesh, 2-3 Tbsps sugar or to taste, 1⁄2 tsp salt, 30 g corn flour, 2 “Grade A” eggs, 100 ml thick coconut milk, 50 g grated white coconut flesh

【Utensil】
2 pieces puff pastry [12 x12 inches] – store bought
10” pie tin (greased)

【Method】
1.Preheat oven @ 190℃.
2.Roll out the puff pastry and place into the greased pie tin.(pic 1)
3.Roll out the second piece of pastry & place it over the first one to cover all the uncovered area. Press to make sure the pastry stays.(pic 2)
4.In a mixing bowl, combine all the ingredients and adjust sugar to taste.(pic 3-5)
5.Pour the durian pie filling onto the pastry & bake for 45 minutes or until golden brown.(pic 6-8)
6.Serve pie warm as the pastry is still crispy.
