沙味爆虾球Salsa Fried Prawn

【材料】
大明虾球10只(去壳)、鸡蛋1粒、草莓粒20克、奇异果粒20克

【脆浆粉】
风车粉4汤匙、澄面粉2汤匙

【沙味酱】
柠檬1粒、桔子5粒、糖125克、盐半茶匙、牛油75克、生奶100克、蛋黄1粒

【做法】
1. 沙味酱做法:将沙味酱里的牛油与盐及糖拌匀,与其余沙味酱材料一起放入搅拌机里搅拌成茸备用。(图1-2)
2. 将全部材料全部混合均匀备用;脆浆粉调好备用。
3. 将虾球洗净沾上蛋液后再粘上脆浆粉,放入烧热6分的热油里炸至虾球熟透金黄,便捞起备用。(图3-4)
4. 把预先调好的酱料倒入锅里,勾少许芡,再放入炸好的虾球,开火兜炒片刻即可。(图5-7)
5. 加入草莓粒及奇异果粒,拌均后盛出,趁热吃。(图8)

【INGREDIENT】
10 pcs big prawns (shelled), 1 egg, 20g strawberry, 20g Kiwi fruit

【BATTER】
4 tbsp premium tapioca flour, 2 tbsp wheat starch

【SAUCE INGREDIENT】
1 lemon, 5 Kumquat, 125g sugar,1/2 tsp salt, 75g butter, 100g fresh milk, 1 egg yolk

【METHOD】
1. To prepare sauce: Mixes butter with salt and sugar, blend together with remaining sauce ingredients in an electric blender till smooth, set aside. (pic 1-2)
2. Mix all batter ingredients, set aside.
3. Cot prawns with egg sauce and then coat with batter, deep fry the spring roll at 60% hot oil until golden brown and cooked through; drain. (pic 3-4)
4. Pour pre-mixed sauce into wok and heat up, thicken with starch and toss in fried prawns and stir to mix briskly. (pic 5-7)
5. Toss in strawberry and Kiwi fruit, dish out and serve hot. (pic 8)
