泡菜煎饼Kimchi Pancake

【材料】
去壳虾肉50克、苏东1只(切条)、青葱1棵(切长段)、红辣椒1条(切丝)、 韭菜20克(切长段)、泡菜80克(切丝)

【面糊】
中筋面粉1杯、冰水1杯、盐和胡椒粉一小撮、鸡蛋2粒

【蘸酱】混合
酱油2汤匙、白醋4茶匙、白糖2茶匙、韩国辣椒粉2茶匙

【做法】
1.把鸡蛋稍微打散,置放一旁。
2.把面粉,盐及胡椒粉混合,然后倒入冰水,搅拌至细滑,稠度像优葛。(图1)
3.热一个26公分不粘锅,以中火热3汤匙的油,倒入一半的面糊,旋转至铺满锅子。(图2)
4.把一半的材料随意排列在面糊上。(图3-4)
5.倒入一半的蛋液在材料上面,一旦底部转黄后,翻转过来,再煎约2分钟,然后以同样面积的碟子覆盖,翻转过来即可。重复同样步骤做第二片泡菜煎饼。(图5)
6.沾蘸酱吃。

【Ingredients】
50g shelled shrimp, 1 squid (cut into strips), 1 stalk spring onion(cut section), 1 red chili (juliennes), 20g chives (cut sections), 80g kimchi (juliennes)

【Batter】
1 cup All-purpose flour, 1 cup ice water, pinch of salt and pepper, 2 eggs

【Dipping sauce】mix all
2 tbsp soy sauce, 4 tsp vinegar, 2 tsp sugar, 2 tsp Korean chili powder

【Method】
1.Slightly beating the egg and set aside.
2.Mix flour with pinch of salt and pepper, pour in ice water and mix into smooth batter with consistency like yogurt.(pic 1)
3.Heat a 26cm non-stick pan over medium flame and add 3 tbsp of oil. Pour half of the batter into pan and tilting around until it cover whole pan. (pic 2)
4.Line half of all main ingredients on top of batter accordingly. (pic 3-4)
5.Pour half of the egg wash on top, once the bottom turns into golden brown, flip over and continue to sear for about 2 minutes, cover pan with a similar size of pan and flip over, the pan cake is ready to serve. Repeat steps for the second pan cake. (pic 5)
6.Serve kimchi pancake with the dipping sauce.
