泰式沙丁鱼冬炎汤 Sardine TomYam Soup

┃材料┃
A: 番茄酱沙丁鱼1罐、草菇3粒(切半)
B: 香茅2支(切片)、南姜40克(切片)、芫荽根2棵、指天椒8条(拍扁)、疯柑叶3片(切丝)、葱头仔4粒、清水1.5公升
┃调味料┃
鱼露2汤匙、糖1茶匙、酸柑汁2汤匙
┃做法┃
1. 煮沸清水,加入材料B煮至香味溢出。(图1)
2. 加入沙丁鱼,然后加入草菇煮至熟。(图2-3)
3. 熄火后,加入调味料,以芫荽装饰即可享用。(图4)

┃INGREDIENT┃
A: 1 can tomato sauce based sardine, 3 straw mushroom (halved)
B: 2 stalk lemon grass (sliced), 40g galangal (sliced), 2 stalk coriander root, 8 chili padi (smashed), 3 sprigs kaffir lime leaves (juliennes), 4 shallots, 1.5 liter water
┃SEASONING┃
2 tbsp fish sauce, 1 tsp sugar, 2 tbsp lime juice
┃METHOD┃
1. Bring water to boil, add in all ingredients B and boil until fragrant. (pic 1)
2. Add in sardine, follow with straw mushroom and boil until cooked. (pic 2-3)
3. Off heat and add in seasoning, garnish with coriander. (pic 4)
