泰式沙律虾Thai Style Salad Prawns

【主材料】
中虾8只(去壳留尾)

【材料A】
清水500毫升、芫荽2束(剁碎)、风柑叶 3片(撕碎)、鸡精粉1茶匙

【材料B:(沙律)】
生芒果丝60克、小葱头5粒(切片)、姜丝1汤匙、指天椒4条、虾米1汤匙(浸软剁碎)

【材料C:(沙律酱)】
鱼露1汤匙、酸柑汁3汤匙、白糖1-2汤匙(或适量)、麻油1茶匙

【装饰】
烤芝麻少许、青葱丝少许

【做法】
1.把所有材料A放入锅内煮至滚,然后转小火焖10-15分钟。加入虾,煮2-3分钟或至虾肉变色成熟,从锅取出虾肉,置放一旁。
2.把材料B混合,然后加入材料C和虾肉,拌均后倒入碟子,撒上芝麻和青葱丝即可。

【小贴士】
烫过的虾冷藏后会比较爽口。

【Ingredients】
8 medium large prawns (shelled leaving tails intact)

【Ingredients (A)】
500m water, 2 stalks coriander root (yin sail, smashed), 3 kaffir lime leaves (torn), 1tsp chicken stock granules

【Ingredients (B) : Salad】
60g shredded unripe mango, 5 shallots (sliced), 1tbsp shredded ginger, 4 chilli padi (sliced), 1tbsp dried prawns (soaked and finely chopped)

【Ingredients (C): Sauce】
1tbsp fish sauce, 3tbsp lime juice, 1-2tbsp sugar or to taste, 1tsp sesame oil

【Garnishing】
Some toasted sesame seeds, spring onion curls

【Method】
1.Put ingredients (A) in a saucepan and bring to boil. Reduce heat and simmer for 10-15 minutes. Add in prawns and cook for 2-3 minutes or until prawns change colour and are cooked. Remove prawns and set aside.
2.Combine ingredients (B) in a mixing bow. Add in sauce (C) and prawns. Toss we to mix then arrange on a serving plate. Sprinkle with toasted sesame seeds and spring onion curls.
