泰式臭豆长豆 肉碎豆腐 Thais Style Braised Tofu

┃材料┃
无糖豆浆250毫升、鸡蛋3粒、蛋白1粒、猪肉碎300克、长豆3条(切细粒)、臭豆6颗(切碎)、小葱头30克(切丝)、
油适量
┃调味料┃
泰辣椒膏1汤匙、鱼露1汤匙、蚝油半汤匙、鸡精粉1茶匙、糖1茶匙、指天指3条(切碎)、水份6汤匙
┃勾芡┃
粟粉水适量
┃做法┃
1. 把蛋白,蛋黄打散,加入豆浆水拌匀,过滤。
2. 先在大碗内铺上油纸,倒入蛋豆浆水,用小火蒸熟后,放在一旁冷却待用。
3. 烧热油,把冷却豆腐放入滚油炸至金黄色,捞起装碟。

4. 热2汤匙油,爆香葱头丝,炒香肉碎。(图2-3)
5. 倒入长豆粒、臭豆和调味料水份煮香,倒入少许薯粉打芡,铺在豆腐上即可。(图4-5)

┃INGREDIENT┃
250ml plain soya milk, 3 eggs, 1 egg white, 300g minced meat, 3 long bean (diced), 6 pcs Petai (diced), 30g shallot
(sliced), some oil
┃SEASONING┃
1 tbsp Thai chili paste, 1 tbsp fish sauce, ½ tbsp oyster sauce, 1 tsp chicken powder, 1 tsp sugar, 3 chili padi (chopped). 6
tbsp water
┃THICKENING┃
Some tapioca starch
┃METHOD┃
1. Beat egg white and egg yolk; and then add in soya milk, stir well and strain.
2. Place parchment paper on bottom of bowl, pour in egg soya milk; and then steam in low heat until cooked, set aside to cool down.
3. Heat oil in wok, deep fry tofu till golden brown, drain.

4. Heat 2 tbsp oil in wok, sauté shallot until fragrant, toss in minced meat, fry well. (pic 2-3)
5. Follow with diced Petai, long beans and seasoning; cook until flavor emerged and thicken with dash of starch;
and then pour over tofu to serve. (pic 4-5)
