湿巧克力杯子糕Super moist chocolate cuppie

【材料】
牛油125克、盐1/4茶匙、细糖200克、A蛋2粒、低筋面粉140克、发粉1茶匙、小苏打粉1/2茶匙、可可粉50克(过筛)、鲜奶125毫升、滚水80毫升、即溶咖啡精1茶匙、白兰地1汤匙

【巧克力糖霜材料】
可可粉50克、栗米粉60克(均筛过)、细糖50克、A蛋黄2粒、炼奶125毫升、鲜奶375毫升、牛油100克

【巧克力糖霜做法】
1.把可可粉和栗米粉一齐筛入钢盆中,加入细糖,蛋黄,炼奶及鲜奶混合,隔水以中火炖煮至稠。(图1)
2.熄火,马上加入牛油搅拌均匀,然后盖上保鲜膜以防止表面结痂,放至冷却。

【杯子糕做法】
1.把烤炉预热至180℃。把纸杯垫入烘盘中。
2.把牛奶、咖啡水和可可粉混合。(图2-3)
3.用电动搅拌器把牛油,细糖及盐混合,并逐个加入蛋黄,搅拌至发起。(图4)
4.把面粉,发粉及小苏打粉混合过筛,分成3份。
5.先拌入1/3的面粉和半份巧克力浆拌匀,再加入1/3的面粉及剩余巧克力浆,最后加入剩余的粉料轻轻拌匀。(图5)
6.拌入白兰地,然后把面糊舀入纸杯里至七分满,以180℃烤20-25分钟。(图6-8)
7.从烤炉取出蛋糕。待冷却后才涂糖霜。

【组合】
通过挤袋把巧克力糖霜挤在蛋糕表面,再以可食用花朵等装饰。(图9)

【Ingredients】
make 20125 g good quality butter, 1/4 tsp salt, 200 g castor sugar,2 “Grade A” eggs, 140g superfine flour(sifted), 1 tsp baking powder,1/2 tsp bicarbonate of soda, 50g cocoa powder(sifted),125 ml fresh/UHT milk, 80 ml hot boiling water+1 tsp instant coffee granules, 1 tbsp brandy
20-22 pcs cupcake liners

【Chocolate Frosting】
50 g cocoa powder(sifted), 60g corn flour(sifted), 50 g castor sugar, 2 “Grade A” egg yolks, 125 ml condensed milk, 375 ml fresh milk, 100 g butter

【To prepare frosting】
1.Sift cocoa powder, cornflour into a double boiler. Add castor sugar, egg yolks, condensed milk and milk, slowly mixing with a wire whisk.Double boil over medium heat, stirring until frosting thickens.(pic 1)
2.Remove from heat and stir in butter immediately. Cover with a cling film to prevent a layer of skin forming on the frosting. Leave to cool completely before using.

【To prepare cuppies】
1.Preheat oven to 180℃, line cupcake papers/ liners in a tray.
2.Combine milk and coffee sauce with the sifted cocoa powder.(pic 2-3)
3.Using an electric beater, cream butter, castor sugar and salt. Beating in eggs till light and fluffy. (pic 4)
4.Sift together the superfine flour, baking powder and soda bicarbonate.
5.Add 1/3 of sifted flour mixture to the creamed butter, followed by half the melted chocolate mixture.
6.Add another 1/3 of flour, then the remaining chocolate mixture. Then add the rest of the flour. Do not over-beat.(pic 5)
7.Stir in brandy and using a metal spoon, scoop the cake batter into the paper liners filling three-quarters full and bake in pre-heated oven at 180℃ for 20-25 minutes. (pic6-8)
8.Remove from oven and turn onto wire rack to cool completely before frosting.

【To assemble】
Pipe chocolate frosting using a nozzle and piping bag over each cupcake.Decorate with flowers or any edible dredges. Serve immediately.(pic 9).
