滑蛋煎生蚝Oyster Omelet

材料
生蚝肉250克、鸡蛋5粒(打散)、蒜茸1大汤匙、芫茜适量

生粉面糊(拌匀)
生粉80克、水300克、盐1/2茶匙、鸡精粉1/2茶匙、胡淑粉少许

调味料
麻油少许、鱼露少许

做法
1.生蚝肉以清水冲洗去除泥沙,再川汤滚水片刻,沥干。(图)
2.烧热平底锅,下少许油加热,倒入1勺的面糊浆,旋转成圆形的薄片。(图2)
3.倒入适量蛋液稍煎至半熟,放入适量的生蚝煎熟。
4.反过另一面,中间用锅铲拨开,再注入1汤匙油,放入适最蒜茸爆香。(图4-6)
5.淋入调味料一起与蚝蛋拌炒至香便可上碟,重复剩余材料至完。
6.面上放入芫茜便可进食。

Ingredients
250g oyster flesh, 5 eggs (beaten), 1 tbsp chopped garlic, some coriander

Batter Ingrediens (combined)
80g corn flour, 300ml water, 1/2 tsp salt, 1/2 tsp chicken stock granule, dash of pepper

Seasoning
Some sesame oil and fish sauce

Method
1.Wash oyster flesh to remove sands and then blanch in boiling water briefly, drain.(pic 1)
2.Heat non stick pan with some oil and then pour in a ladle of batter, tilt the pan around to coat the pan with batter.(pic 2)
3.Pour in some egg sauce and fry until half cooked, add in some oyster flesh.
4.Turn it over and empty the middle of the pan, add 1 tbsp oil and saute garlic until fragrant.(pic 4-6)
5.Pour in seasoning and stir fry with the oyster omelet till cook. Repeat steps until all ingredients finish.
6.Sprinkle coriander on top and serve.
