【材料】
白斗鲳 1条(约900克)、蒜米少许、指天椒 5条、四川榨菜200克(切丝)、半肥猪肉60克(切丝)、香菇5朵(切丝)、白豆腐1件(切块)、青葱2根、姜丝少许、酸梅3粒

【腌料】
姜汁1茶匙、绍兴酒1茶匙

【调味料】
糖1汤匙、盐1⁄2茶匙、生粉1茶匙、江鱼仔粉少许、味 精少许

【做法】
1.将鱼用盐洗净抹干,再用姜汁和绍兴酒涂抹于鱼身内外。
2.热油爆香小辣椒及蒜米,加入四川榨菜、冬菇丝和猪肉爆香,再加入调味料炒好,捞起备用。
3.将青葱切成两段,垫盘底。把鱼放上,淋上炒香料,再放入其余材料。放入蒸炉用大火蒸10至15分钟。
4.熄火,淋下熟油(将3大匙生油和1小匙麻油煮熟),即可上桌。

【Ingredients】
1 promfet (900g) , some chopped garlic, 5 chili padi, 200g Szechuan Zha Chai (shredded) , 60g pork meat (shredded), 5 mushroom (shredded), 1 white tofu, 2 stalk spring onion, some shredded ginger, 3 salted plum

【Marinade ingredients】
1 tsp ginger juice, 1 tsp Chinese wine

【Seasoning】
1 tbsp sugar, 1⁄2 tsp salt, 1 tsp corn flour, some Anchovies powder, dash MSG to taste

【Method】
1.Wash fish and marinade with ginger juice and chinese wine.
2.Heat some oil in wok, sauté chili padi and garlic till fragrant, add in Szechuan Zha Chai, mushroom and pork meat, stir well, season to taste and set aside.
3.Put sping onion on the steam plate, top with fish. Pour the Szechuan Zha Chai mixture and the remaining ingredients over the fish, move to steamer and steam for 10-15 minutes.
4.Off heat, drizzle in hot oil (3 tbsp cooking oil cook with 1 tsp sesame oil), dish out.
