潮式焖猪脚 Teochew Braised Trotter

【材料】
猪脚1只(斩小件)、干栗子80克、蒜3粒(1粒拍碎)、辣椒干适量、香菇10朵(浸软)
【调味料】
酱油3汤匙、蠔油、黑酱油、辣椒酱各1汤匙
【做法】
1. 以少许油炒香拍烂的蒜,放入猪脚炒至肉变色,加入其余材料同炒。(图1-2)
2. 倒入调味料及清水淹过猪脚,煮滚后转小火焖两个小时。(图3)

【Ingredients】
1 pig trotter (cut into bite size),80g dried chestnut, 3 whole garlic (smashed one and keep the othe 2 in
whole), some dried chili, 10pcs Chinese mushroom (soaked)
【Seasonings】
3 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp oyster sauce, 1 tbsp chili sauce
【Method】
1. Sauté chopped garlic with some oil until fragrant, toss in trotter, stir fry
till the meat change colour. (pic 1-2)
2. Add in remaining ingredients, seasonings and then pour in water to cover the ingredients, simmer in low
heat for 2 hours.(pic 3)
