火腿猪肉卜 Spiral Puffs With Pork & Ham

馅料:虾米1汤匙(浸泡剁碎)、大葱茸2汤匙、红萝卜茸2汤匙、马铃薯1粒(煮熟切丁)、
金佣牌火腿猪肉罐头70克、食油1汤匙
调味料:胡椒粉½茶匙、盐¼茶匙、鸡粉½茶匙、薯粉1汤匙
水皮材料:
普通面粉200克、马芝琳80克、冰水100毫升
油皮材料:
普通面粉135克、马芝琳85克、盐½茶匙
做法:
1: 把金佣牌火腿猪肉罐头切丁。
2: 起锅热油,把虾米爆香,然后加入其它馅料材料和调味料,炒均后盛出待凉。(图1)
3: 把所有水皮材料混合成滑面团,然后让它醒15分钟,再均分成7份。
4: 把所有油皮材料混合成滑面团,然后再分成7份。
5: 用一份水皮包住一份油皮,搓圆,擀成长条,擀平再卷起成瑞士卷状,然后切半,再擀成圆形。(图2-6)
6: 每份面皮包入1汤匙馅料,对半折成半月形,再把边缘掐紧。(图7)
7: 把猪肉卜以温油炸至金黄色,滴干油即可享用。(图8)

Filling Ingredients : 1 tbsp dried prawns (rinsed and finely
chopped), 2 tbsp diced onion, 2 tbsp diced carrot, 1 potato
(boiled till tender and diced), 70g GOLDEN MAID Brand
Canned Chopped Pork & Ham, 1 tbsp cooking oil
Seasonings : ½ tsp pepper, ¼ tsp salt, ½ tsp chicken stock
powder, 1 tbsp tapioca flour
Water Dough Ingredients :
200g plain flour, 80g margarine, 100ml ice water
Oil Dough Ingredients :
135g plain flour, 85g margarine, ½ tsp salt
Method :
1: Dice GOLDEN MAID Brand Canned Chopped Pork & Ham.
2: Heat oil and fry dried prawns until fragrant. Put in the rest
of the filling ingredients and add seasoning to aste.
Toss and fry briefly to combine. Dish out and set aside
to cool completely. (pic 1)
3: Mix all water dough ingredients well to form a smooth
dough. Rest dough for 15 minutes then divide into 7
equal portions.
4: Mix all oil dough ingredients to form even dough. Divide
into 7 equal portions.
5: Wrap oil dough inside water dough into a ball. Roll out into
a longish shape and roll flat, then roll up Swiss roll style.
Cut into half, flatten out into a circle. (pic 2-6)
6: Wrap up with 1 tablespoon filling ingredients. Fold it
into a half moon and pinch the edges. (pic 7)
7: Deep-fry the spiral puffs in warm oil until golden in
color. Dish out and drain. (pic 8)
