炒萝卜糕Sauteed Radish Cake

【材料】
粘米粉200克、澄面粉130克、鸡叉烧40克(切粒)、虾米40克、香菇40克(切粒)、盐13克、鸡精粉10克、白糖40克、白萝卜600克(去皮)、清水800毫升

【配料】
蒜茸1茶匙、菜脯茸1汤匙、参巴辣椒1汤匙、鸡蛋1粒、韭菜4根(切4公分长段)、珍珠鲍150克、食油3汤匙、豆芽适量

【调味料】
蚝油1汤匙、白糖和盐适量、酱油1汤匙、胡椒粉少许

【做法】
1.用2汤匙油把鸡叉烧、虾米及香菇炒均。
2.白萝卜去皮切丝后以400毫升的水煮至熟透成透明状,滤掉水分,加入鸡精粉和糖,然后加入炒过的(1)。
3.把其余的400克清水、粘米粉和澄面粉拌均成糊,加入(2)炒至黏锅。
4.然后把材料倒入预先抹油的方形烤盘内,大火蒸1个小时。
5.蒸好的萝卜糕待冷却后切块备用。
6.起锅热油,把蒜茸和菜脯茸爆香。
7.加入萝卜糕、调味料、 参巴、珍珠鲍及豆芽炒均,然后下蛋再次炒均后加入韭菜,盛出时撒上鸡肉松。

【小贴士】
待冷后的萝卜糕在切的时候可在刀面上抹一层油以免黏身。

【Ingredients (A) 】
200gm rice flour, 130gm tung mien flour, 40gm chicken char siew (diced), 40gm dried shrimp, 40gm chinese mushroom (diced), 13gm salt, 10gm chicken powder, 40gm sugar, 600gm white radish (peeled), 800ml water

【Ingredients (B) 】
1tsp chopped garlic, 1tbsp chopped dried radish (choy poh), 1tbsp sambal chili, 1 nos egg, 4 stalks chives (cut into 4cm length), 150gm pacific clams, 3tbsp cooking oil, a handful of bean sprout

【Seasoning】
1tbsp oyster sauce, salt and sugar to taste, 1tbsp light soya sauce, dash of pepper

【Method】
1.Stir-fried the chicken Char Siew, dried shrimp and mushroom with 2 tablespoons oil.
2.Peeled and shredded the radish, boiled with 400ml water until cooked and transparent and strained. Add salt, chicken powder and sugar, and fold in the stir-fried ingredients.
3.Add half water to rice flour and tung mien and stir it until become a paste. Then fold in all the ingredients and stir-fried until the texture is sticky.
4.Pour the batter into a lightly greased square pan and steamed over rapid boiling water for 1 hour.
5.Cool the radish cake thoroughly before cutting into small pieces for frying later.
6.Heat up the oil and stir-fried the garlic and choy poh until fragrant.
7.Add in radish cake pieces, seasoning, sambal chili, pacific clams and bean sprouts. Then, break in the egg and fried well and tossed in the chives. Dish up and topped with chicken floss.
